Linda's Lasagna

This lasagna is awesome! It freezes well. I use regular lasagna noodles, instead of boiling I put them in a bowl of hot tap water for 20 minutes.

Blue Cheese, Spinach Meat Loaf Muffins

I just knew I would love this recipe. In fact, I sent my mother a copy before I even made it. Who wouldn't love spinach & blue cheese in a meatloaf? Sadly, this recipe was a big disappointment. I made exactly as specified (although I added a little extra blue cheese and spinach as some other reviewers suggested and baked it in a loaf pan). I did not care for this at all. I did learn one valuable lesson: adding a cup of spinach is un-noticeable after it bakes down, so I will be adding spinach to my traditional meatloaf recipe.

Butternut Squash Soup

awesome. I used a little garlic with the onion. I baked the squash after cutting it in half and placing on a cookie sheet brushed with olive oil. Used much less cream cheese and much less red pepper (the 1st time I made this it came out way too spicy even using 1/2 the amount of red pepper). I blended in my Vitamix and it is sooo creamy.

Greek Pasta with Tomatoes and White Beans

Very good and healthy too! The feta cheese is what makes it! Based on other reviews, I sauteed one small onion + 5-6 cloves of fresh garlic, then added the 1 28 oz can italian tomatoes (cut up) and later added a 15 oz can of diced tomatoes to add more liquid. To the tomato sauce I also added: 1/2 tsp suger, 1 tsp salt, some pepper, basil, oregano, Italian seasoning, a small can of black olives, drained. I added 2 chicken breasts, sliced (browned in a skillet w/ ground pepper fresh garlic, onions). I did not chop the spinach, since it wilts down to nothing.

Cha Cha's White Chicken Chili

Very good. I added corn. I only used a few jalapenos, because it is very hot (spicy) as other reviewers mentioned. I browned my chicken in a skillet and then cut into cubes. Next time I will cook the chicken in the crockpot so it has a more 'shredded' consistency.

Delicious Grilled Hamburgers

Awesome! I grilled these burgers on my George Foreman and they tasted like they were grilled on a charcoal grill outdoors. I followed the recipe but reduced the Liquid Smoke to about 1/4 teaspoon. That was plenty!

Bow Ties with Sausage, Tomatoes and Cream

This is wonderful and freezes well. I added 1/2 lb ground beef (browned in garlic), extra garlic, but omitted the parsley. I took the advice of other reviewers and baked the sausage x 50 minutes turning once before slicing.

Garden Veggie Pizza Squares

These are awesome. Unique, easy, with a great presentation. I made these wih 1/3 less fat Cream Cheese and everyone at the party raved and requested the recipe. As another reviewer advised, press the veggies down into the creamm cheese to prevent them from rolling off. It seemsed as though the dough wouldn't spread out enought to cover the whole cookie sheet but I just kept working with it until it did.

Taco Seasoning I

Very quick. No reason to buy pre-packaged Taco Seasoning. I followed recipe except slightly decreased amt of red pepper flakes and omitted onion powder (didn't have any). I cooked 1 & 1/4 lb. low fat ground beef with fresh garlic; poured off fat. Added Taco seasoning + 1/2 c. fresh, chopped onions + 1 cup water. Brought to boil and simmered for about 15 min. Next time I would decrease water to 2/3 or 3/4 cup (I had a little too much liquid, but not a problem). Very good. DH loved these tacos!
