About this Cook
Left the city to try my hand as an Organic Farmer here in Central Texas. I'm about to begin my fourth season, and I'm really looking forward to it.
My favorite things to cook
Virtually any recipe that allows me to make use of the abundant vegetables that I grow every year. My specialty is soups, stews, and roasts, but more than anything I enjoy cooking what my friends and family enjoying to eat.
My favorite family cooking traditions
Most around the holidays. There are some signature dishes that my Grandma Passed down to me; Chicken and Dumplings, Mustard Potato Salad, and Fried Chicken using a pressure cooker, but Mom has her homemade chocolate pies, and my Sister has her pinto beans and ground beef, and Dad has his home-fries, and sausage grave from scratch.
My cooking triumphs
A dry rub that I found here on Allrecipes.com for an 8lb brisket that I cooked for a large gathering of friends. I was completely gone before nightfall.
My cooking tragedies
I was in a hurry to make my Grandma's Mustard Potato salad for a potluck, and didn't allow the potatoes to cool before I added the mustard and the mayo. The heat caused the Mayo to spoil, and the whole of the potato salad was unfit to eat be they time I made it to the potluck supper.

Basic Quiche by Shelly
Never made quiche before, and this recipe is an excellent jumping off point. Love it!

Potato Cake
What a great idea for left over mashed potatoes. The flour helps to bind them together. The only thing that I changed is that I used a tablespoon of potato, flattened it out, then some cheese, then some potato on top, and flattened them out into small medallions and fried them in some butter. My family raved!

Tasty Collard Greens
This recipe is as "Southern" as one can get. Just like my great Aunt in East Texas use to make them.
