Lemon Mushroom Herb Chicken

This was a great recipe, will definitely make this again. I did add fresh mushrooms, garlic, onion and string beans to the soup, wine, lemon mixture. I also seasoned the chicken, browned it on both sides, removed from pan, cooked the veggies, added the mixture and chicken back into the same pan and simmer for 30 mins. Easy one dish cooking on the stove top. Served over white rice.

Chicken Marsala

Super yummy and VERY easy to make, this dish looks elegant as well and is great for formal dinner parties. Made very minor changes, used thin cut chicken cutlets which did not need to be pounded down thinly. Seasoned the chicken with garlic powder, salt and pepper, then floured the chicken. Only used 2tbsp of butter and olive oil, and bought good marsala wine from the state store. I did not use the sherry just added more marsala wine. I doubled the fresh mushrooms and added onion and fresh garlic. This is a keeper my husband and I loved it. You will not be dissapointed.

Sweet and Spicy Pumpkin Seeds

These were excellent, roasted for 30minutes at 275, only used 4 tbsp of sugar which was more than enough. Added a little more cinnamon, these were excellent will be making these every year for my sweet batch of pumpkin seeds.

Chicken Honey Nut Stir Fry

I thought this dish was excellent! I used turkey cutlets cut in strips because thats what I had out. I cooked the meat first until no longer pink. Then I added three fresh cloves of glaric, I diced up half of a fresh tomato with seeds removed, half an onion, a can of green pigeon peas (drained), 1 cup frozen mixed veggies, and added it to the pan with the meat, and cooked for a few minutes to soften up the onion and glaric. I followed the recipe for the sauce to the T except I used ground ginger not fresh. Poured the mixture over the meat, added some hot sauce and red pepper flakes for some heat, mixed well covered and cooked for another ten minutes. This is a keeper, will make again. You can use any type of protein you wish, even tofu if your a vegetarian. Served this over brown rice.

Spicy Chipotle Turkey Burgers

This was delicious, I had them about two hours aog. I only made a few minor changes, I used fresh garlic, 2 chipotle peppers as stated by other reviewers, I added fresh mushrooms and sauteed them and the onion in some olive oil, cooled completely before adding to the mixture, I only used 1 tablespoon of fresh cilantro and I'm glad I did, it has a very strong flacor, if I used 2 tbsp of it, the flavor would have overpowered everything else. I cooked them on the BBQ, never put them in the oven. This is a keeper, very delicious, even with the two peppers its was just spicy enough, not overly hot.

Mushroom Pork Chops

Yummers! I followed the advice of the other review's and used two cans of mushroom soup. I also browned the pork chops in the olive oil, 3 minutes on each side, then and additional three minutes for both sides. While the meat was browning I mixed the two cans of soup, a half a cup of sour cream and thre tablespoons of grated parm cheese in a bowl. Once the meat was done I deglazed the pan, add sauteed fresh mushrooms, red onion, and four cloves of fresh minced garlic until soft. Returned the meat to the pan and poured the mixture over the chops. Covered and cooked on the stovetop for 25 mins, stirring often. The pork chops were sooo tender. This is a keeper, will make again!

Meatball Nirvana

Just had these for dinner, with angel hair pasta and homemade garlic bread. These meatballs were fantastic, the only change I made was using ground turkey, omitting the salt completely, added some black pepper,used 1 egg instead of milk,and 3 cloves of fresh garlic. They were moist and delicious. I was nervous at first using an entire small onion diced, but I'm glad I did. Will make this again, but will tweek it more to my liking, alittle more heat next time, and maybe another clover of garlic.

Crumb-Coated Chicken Thighs

Just had this for dinner, and it was DELIOUS. I followed the advice of the other reviews and used a 1/2 cup of panko bread crumbs and only a 1/2 tsp of salt, and that coated 4 boneless skinless chicken thighs perfectly. I also only cooked it for 15 mins on each side. I did not have any curry so I used cayenne in its place for some added heat. At the last 8 mins of cooking time I drizzled honey over the chicken, for a touch of sweetness with the spicy. Will definitely make this again!

Amazing Pork Tenderloin in the Slow Cooker

I made this on two nights ago for dinner, it was delecious! The next time I make this I will check the internal temperature of the pork at three hours, and continue onto the fourth hour as needed. The meat was a tad dry, maybe it only needed 3.5 hours, i cooked a 2.69lb tenderloin. I would also try using some fresh onions along with the onion packet, and alittle more garlic. This is a keeper, served it with garlic mashed potatos and a garden salad. Delicious.

Easy Pork and Sauerkraut

I made this last night for dinner, I did not have any beer so I used a 2/3 of water, to try and avoid the dish from burning and the meat drying out. I did not have any minced garlic so I used 1 tbsp of garlic powder. Sadly the meat turned out very DRY. I will give this recipe another chance using the beer next time and fresh garlic, however I will scale down the "low" temp cooking to 4 hours to try and avoid the meat from drying out.
