Cranana Jam

Good recipe - first cranberry jam recipe I've found. Very different, and it tastes great. I made it as written, though I might not put quite as much sugar in next time so you could taste some of the bite of the cranberry. Very sweet, not tart at all. I could definitely taste the banana more than anything else, so I would also recommend using overly ripe bananas to add a sweeter, less banana-y taste.

Cranberry Applesauce Muffins

Good basic recipe - not quite sweet enough for my tastes (and I used sweetened applesauce). Next time I'd either add more sugar or dust the top with course sugar. Otherwise I followed the recipe to the letter.

Fresh Rhubarb Pie

Zucchini-Chocolate Chip Muffins

Quick and Easy Vegetable Soup

Eh. That's about all I have to say about this recipe. Bland, even with tons of seasoning. The V8 wasn't the best choice. Probably won't be making this again, but it did feel really healthy with all the veggies.

Black Bean and Corn Quesadillas

Great recipe! Loved the hint of sweet from the brown sugar! Do NOT leave it out! I baked mine in the oven then broiled for a minute or two to get the tops brown.

Super Sausage Gravy

Made it this morning for my family. They loved it! Said it tasted just like it came from a restaurant! I did think that the sausage to gravy ratio was a bit off though. Next time I will definitely double the milk and flour. I ended up adding some more in at the last minute, and with a good whisk, I was able to get most of the lumps of flour dissolved. Next time I will just add the extra milk and flour from the beginning! Otherwise, great recipe!!

Pizza Casserole

Made this even quicker as a skillet meal! Just browned the beef, onion, and green pepper in a skillet, added the pepperoni, sauce and cooked pasta and covered with cheese. Kept the heat on low while the cheese melted, and a few minutes later - done! Super fast, super yummy, and it was wonderful!

Coconut Poke Cake

Made this cake this afternoon with help from the boyfriend (ok, he got to poke the holes, cuz that was the "fun" part lol). Amazed at how yummy it turned out! I accidentally bought coconut milk instead of cream, but I put a couple of tsps. of cornstarch in it, and I think it was ok. The cake was very moist - almost like a tres leche cake, but the flavor was great! Loved the "frosting"! My boyfriend though it would be even better chilled, though, so I stuck it in the fridge and will try it later :)

Cream of Peanut Soup

I'm giving this a 3 because my boyfriend said it "wasn't bad" (granted, he eats just about anything I put in front of him, including things I accidentally burn and basically destroy). I was able to choke down half a cup full, but didn't like it. It had a funny burnt taste to it - and no, I didn't use an off brand peanut butter. I think it was slightly better as it cooled, so maybe it would be better as a cold soup, but as it was, I am not a fan. However, as peanut butter is my boyfriend's favorite food, he has a goal to try any and all peanut butter recipes he finds. He ended up eating it all (I assume anyway...I sent it home with him in a container which came back to me clean and empty), so I guess for the peanut lover this is decent.

BBQ Pork for Sandwiches

Delicious! I put a 5 lb. pork shoulder in the crock pot with about a cup of chicken broth and a diced onion and let it cook on low overnight (About 10 hours). In the morning I trimmed off all the fat, shredded it and added Sweet Baby Ray's regular BBQ sauce. The secret is definitely cooking it in the oven for the extra 30 minutes! I added a little of the broth from the crock pot, plus the diced onion and the flavors melded together sooo well! My boyfriend said this was better than pulled pork sandwiches he's eaten at restaurants! Will definitely make again!

Pineapple Pie III

Made as written - definitely needs more filling! The flavor is good though, so that's plus. I will probably try it again with more pineapple. Also, my crust was a little brown, so I may shorten the cooking time a bit, especially since you cook the filling on the stove before hand.

Country Pound Cake

Haven't tasted it yet, but it sure looks ugly! I've done a lot of baking in my life, but this cake totally fell! I followed the directions exactly, but about half an hour after I pulled it out of the oven, the whole middle of the cake caved in on itself and it looks horrible! I'm sorry, this might taste really good, but I don't think I want to serve this to anyone! (And drat the luck, I was supposed to take this over to my boyfriend's house tomorrow!)

Tater Tot Bake

Great recipe! I was looking for a tater tot casserole recipe like my mother's, and this is pretty close! (Mom's will always be the best comfort food - sorry!) I used 2 cups of cheese and the whole bag of tater tots. It definitely needed the whole bag of tater tots! Will definitely make again!

Jennie's Heavenly Slow Cooker Chicken

My grocery store didn't have the chive cream cheese, so I just used regular. Also I used cream of mushroom instead of golden mushroom. But still...AMAZING!! It smelled soooo good when I came home from work! Served it over rice because that's what I was hungry for. Boyfriend loved it and he's not a huge chicken fan! Don't over cook the chicken, because it is perfect after 4 - 4.5 hours! Will definitely be making this again!

Scalloped Corn

I honestly thought this needed more sugar. Granted, I used a different brand of corn muffin mix (not Jiffy), but I am adding sugar on top when I eat it. Also, I am kind of a sugar-aholic. And I kinda wanted this to taste more like a corn pudding. But yeah, good texture - I drained half the water out of the can of whole corn, but next time I would leave it completely undrained.

Quick Ziti with Swiss Cheese and Ham

Definitely dry...needs some sort of a white sauce. But the flavor is good - I think this is a good starting point for a ham and noodle recipe. I needed something quick for dinner and this fit the bill, but I will be changing it up a little next time I make it. Also, even with the ham, it needs salt.
