Fiery Fish Tacos with Crunchy Corn Salsa

The jicama adds the perfect crunch. These were AmAzInG! I also added black beans and corn to the salsa. A slice of avacado. No cayenne on the little one's fish - just oil. YUM

Slow Cooker Beef Stew I

Very tasty. Mine was a little more thin than thick. In addition to adding more than the suggested amount of veggies, I also added one large sweet potato. Mine was done in six 1/2 hours on low.

S'mores Crumb Bars

Made these for the 4th of July - Big hit. I made more crust as others have suggested, and next time I will also add more marshmallows. I had a hard time measuring them and I think I missed the mark a little. Highly recommend

Bit hit - very easy and healthy!! Make sure not to add too much Cilantro or it will end up tasting like salsa. Let sit overnight to meld flavors.

Sunday Gumbo

I made this as our Thanksgiving opening course and it was a huge hit! I grilled the chicken breast and I doubled the brown rice. It was perfect for us. If I could give it six stars I would. Makes a TON.

this was outstanding! I doubled the brown sugar and butter topping, but not the nuts. A big hit at our Thanksgiving and I am usually the only one who wants sweet potatoes! Thanks for this awesome and easy recipe!

Smokin' Scovilles Turkey Chili

I won the Church Chili Cook-off today with this recipe! I made three changes...I replaced the habanero with a jalepeno, I used black beans instead of kidneys and I ommitted the cumin - personal thing. And most importantly my husband loved it!

Tortellini Soup I

I made this recipe for a sick friend and it went over very well. I used ground turkey instead of sausage and yellow pepper instead of green. I used three cheese Buitoni tortellini and added it to the pot about a half hour before serving. Awesome

Slow Cooker Turkey Breast

this was really easy. I layered the bottom with some celery and carrot too - though my carrot got overdone. I added a can of vegetable stock prior to adding the turkey. I accidentally left the slow cooker on high for three hours, then turned it down to low for another hour (my bone-in breast was six pounds). My turkey FELL off the bone and was still moist. I shredded it and added a steamed "freshlike" bag of vegetables right before serving to make a soup. Add some fresh ground pepper and you're good to go! I served with grilled flatbread.

Harvest Rice Dish

This recipe makes a LOT of dish. I made it for Thanksgiving and everyone raved about it. I omitted the orange zest (I am not a fan) and I used a few chopped pecans rather than almonds. I would make it again. YUM.

Easter Breakfast Casserole

This was a huge hit for our Teacher Appreciation breakfast. Several wanted the recipe! I browned my hash browns just a little prior to putting them in the dish. I also used red bell pepper instead of green. I used a 9X9 glass pan. Will definitely make again.
