Basic Ham and Bean Soup
Superb!! I soaked the beans for 8 hours before proceeding with your instructions (used 3/4 lb. Navy beans and added 1 can small red beans with the ham towards the end of cooking). Substituted 2 cups vegetable broth for 2 cups of the water. I cooked a little longer to soften beans more. Simply fabulous!

Sesame Green Beans
Easy to prepare. Great method for cooking fresh beans. Needs a little more flavor (although others dining with me said they loved it!) I would add more pepper next time.

Scalloped Sweet Potatoes and Apples
Yum! I served this for Christmas dinner with baked ham, cornbread dressing, Sesame Green Beans and salad. It was wonderful! I took advice from other's who reviewed this recipe and used 1/2 tsp. nutmeg and 1/2 tsp. cinnamon in place of the mace and shredded the apples (Granny Smiths). I also covered with foil during the first 45 minutes of baking, then uncovered for 15 min. to brown slightly.
