Chipotle Chicken

I reduced the amount of chipotles to about 1/2 a can. They have a lot of kick, and I was very happy with the level of heat from reducing the amount of chipotles. I didn't have spinach, so I just used corn like some other people had suggested. It turned out great. I made it along with Rush Hour Refried Beans and Mexican Rice II also from this site. Yum!

Rush Hour Refried Beans

My husband and I loved these. The bacon grease gives great flavor. This is now my default recipe for refried beans.

Quick and Easy Refried Beans

I prefer the taste of refried beans that use bacon grease or lard, but these aren't bad and are certainly healthier. I also added a couple of tablespoons of chopped onion with the garlic to give a bit more flavour.

Banana Brown Sugar Pancakes

I never would've thought to use flavored instant oatmeal in pancakes. Very easy and turned out great. I also added a small very ripe mashed banana, and used a little more flour. Will make these again. :)

Chicken Fajita Marinade

I thought it seemed like a bit too much lime juice in the marinade, so I just used the juice of two very small limes. I'm glad I did that, because even so the lime flavor was quite strong. I let it marinade about 4 hours, then cooked in and let it simmer in some mole sauce. Served with Mexican rice. Delicious!

Mexican Rice II

Easy to make, and turned out great. I used a bit more than 1/4 cup of onion, and I also added about 1/4 cup of finely chopped green peppers. I'll definitely be making this whenever I cook Mexican food.

Mexican Mole Sauce

This was a good recipe, but it lacked the depth I'm used to from a mole sauce at a Mexican restaurant. It was easy to make, and I added some chicken that I'd marinated in a chicken fajita marinade, which added a little something. Went well with Mexican rice.
