Vermicelli Noodle Bowl

I love the versatility of this dish. I needed to add a bit more sugar to the sauce. I didn't have any meat on hand so I used steamed edamame and tons of fresh vegetables including cucumber, spinach, squash and zucchini, purple cabbage a walnuts.

Marinated Grilled Shrimp

I used chili sauce instead of tomato sauce and followed the rest of the recipe exactly. My family LOVED it. I served it with jasmine sticky rice and marinated grilled vegetables. Definitely a keeper!

Fried Rice with Cilantro

I used crushed red pepper (just a pinch) in place of the chiles. I sautéed diced fresh green beans and used chicken thigh meat instead. This dish was absolutely delicious!

Irresistible Irish Soda Bread

I added raisins and let the batter rest for 25 minutes before baking. The raisins fell to the bottom while baking but the flavor was tasty!

Slow Cooker Turkey Breast

I didn't have onion soup mix on hand so I seasoned the meat with pepper, garlic salt, rosemary and thyme. I quartered an onion and put it in the cavity. This was by far the most tender and juicy turkey breast that I've ever prepared - and you couldn't get an easier recipe! This method of preparation is definitely a keeper.

Eggplant Parmesan II

Didn't have mozz cheese in the house so I used Parmesan instead. Great flavor overall and easy to prepare. I followed the other reviews and let the eggplant sweat, washed and dried before using. I ran out of egg using two large eggs, so I added a third.

Easy Meatloaf

Used ground turkey instead of beef and added in about one cup each of shredded carrot and broccoli. Threw in some Montreal seasoning blend and Worcestershire sauce. Extremely moist and delicious!

Thai Steamed Mussels

Delicious! Five pounds of mussels was a lot for our seafood buffet for seven people, so unless it is the main dish, plan accordingly! Next time I would buy 2.5 pounds instead.

Chuck's Favorite Mac and Cheese

This is by far the easiest baked macaroni and cheese recipe I've ever made - just mix everything together in a large bowl with the boiled pasta and bake it. Two modifications that I've made are: using Panko breadcrumbs on the top (fluffier/crunchier/better texture) and using 1/2 sharp cheddar + 1/2 horseradish cheddar. I've also prepared it adding chunks of smoked ham. It's delicious and everyone loves it.
