Easy Arroz con Gandules

First of all Arroz con gandules is made with white rice. You can make it with brown rice but it will then not be considered by anyone to be authenthic in taste. Salt is a must. Spanish olives are usually expected. Sofrito is always made with culantro (recao) and ajies dulces. Without the culantro you will not get that authentic taste you are looking for. If you like you can add a combination of any of the following: spanish ham, salted pork fat (tozino), chorizo. Aluminum foil is not needed if you have a decent pot ( I don't know anyone who uses it). How much water depends on your pot and the type of rice you use (long grain, medium grain, etc). I use long grain and one cup of water per one cup of rice. This is what works well for my pot. The rice should not be mushy or over-cooked. I always rinse my rice to remove the extra starch before I cook it. You will be surprise what a difference that makes. Hope this helps.

Libby's® Pumpkin Roll with Cream Cheese Filling

I made two rolls today. I used pumpkin spice instead of the cinnamon and cloves and I left out the walnuts. Came out very good. I also added cool whip to the cream cheese mixture and for extra flavor I added orange zest and a little lemon juice to the pumpkin mixture on one of the rolls I made. Really good. Triple-Cheese Macaroni

Taco Soup II

My family loves this soup. I always leave out the lima beans and hominy and I add frozen corn. It is so DARN GOOD! I always double the recipe and I make this about once a month now. Everyone at worked asked for the recipe. If you want a bigger kick to it you can add the hot taco seasoning, I always use the regular or mild. DELICIOUS!

Pineapple Angel Food Cake I

I was given this recipe at a Weight Watchers meeting years ago and I love it. I also make it with canned pumpkin instead of pineapple. Very good and very easy. Great recipe for children to make.

Kathy's Delicious Italian Pasta Salad

I made this today for a party along with some other salads (including my own Italian pasta salad). This was just a bit bland tasting for me. I think it needed some flavor. I will try adding some a mix of spices to the dressing next time.I also think fresh basil is a must next time around (I had none at home). Anyhow I added a few pieces of broccoli for color and red onion instead of yellow. Thank you for sharing.

Texas Ranch Potato Salad

If you like ranch dressing then you would definitely enjoy this recipe. I'm not that crazy about ranch so this was just ok for me. I made this for a party today (along with four other salads). A few people loved it, including my son and my brother-in-law. I did use 1 cup of sour cream and 1 cup mayo. Anyway thanks for sharing. I know I will be making this again for othe parties.

Italian Sausage Tortellini Soup

Thank you! This soup was very good. I doubled the recipe so we could have left-overs the next day. I did add extra tortellini and extra seasoning, added a can of white beans, omitted the zucchini (didn't have any), used canned Italian stewed tomatoes, and added only half a green pepper. Very hearty. Will be making again this winter! Thanks again Tim!

Cream Cheese Pound Cake I

I didn't enjoy this cake at all. The texture and the taste were not at all what I expected. Too heavy-not at all like a pound cake-more like a bread. It tasted like sugar and butter.

Honey Glazed Ham

I used 1/4 c. of brown sugar instead of the corn syrup, I covered the ham with the cloves, pineapple slices and maraschino cherries, and I added a little bit of the pineapple juice to the glaze. Everyone loved it. I will use this recipe everytime I make ham. Thank you!

Downeast Maine Pumpkin Bread

This is one of my favorite recipes from this site. Instead of using loaf pans, I use a large tube pan. I also use 3 tsp. pumpkin spice and 1/2 tsp. cinnamon instead of what is suggested. I found this receipe last year and then lost it. I am so happy I found it again. I love it! Thanks so much Laurie Bennet.

Cheesecake Supreme

This cake took a much longer time to cook than indicated. I lost track of how long it took but believe me, it seemed forever. I must say, I was a bit nervous waiting for the outcome. I mean let's get real here, I did have to use 5 packages of cream cheese on the darn thing! The outcome: Though I put a pan of water in the oven with the cheesecake in order for it not to crack, the thing still cracked! I think this happen because the directions were to beat the cream cheese and eggs together. Advice:I read in a book that you should beat the cream cheese and sugar before adding the eggs. Once you add the eggs you should beat gently. Anyhoo, my 10 year old daughter LOVED this cheesecake! I thought the taste was good and I think I might make it again but not for a very long time. Thanks!

Golden Rum Cake

This cake came out pretty good. I thought I wouldn't like the nuts in the bottom but I was wrong about that. I cooked the rum with the glaze and I put the cake in the fridge for two days before cutting it. I will surely be making this cake again and again. Thanks a bunch!

Brown Family's Favorite Pumpkin Pie

I cooked this pie for a much longer time than suggested and I still had no problem with the topping burning. The texture of the pie itself was a bit strange-it kinda looked uncooked. But I must say that the taste was good and I surely will be making it again. Thanks!
