Pickled Eggs II

Took Liane's advice and used apple cider, 2 tsp salt and 1/3 cup of sugar. I also dropped the bay leaf and used about 6 cloves of garlic. I've made the recipe a few times at this point and tried re-using the pickle juice with mixed results so I'd recommend creating new pickle juice every time. I now use 18 eggs instead of 12 and find it works out fine which helps stretch the recipe a bit. One hint: use eggs that are at least a few days old. Fresh ones are very very hard to peel and result in all sorts of divots and unappealing gouges. Older eggs peel much more easily. I know it sounds weird that you wouldn't want fresh eggs but trust me, you don't! Warning: the eggs go fast! And we can never wait 8 days.

Easy Curry Couscous

Wow. What an easy way to make couscous tasty. Much to my husband's surprise, the raisins worked. I made the recipe as stated and it was too salty. Next time, I will cut the salt in half.

Garlic Kale

A great way to make kale tasty. I ended up adding a litttle bit of water and covered the pan for a few minutes until the kale wilted. Had it with grilled shrimp. Yum!

Turkey Bean Chili

Hearty, delicious and good for you! What a great, forgiving recipe. We added 2 zucchinis, 1 can of Guinness beer, and used dried instead of canned beans (1 cup for each can. Boiled beans for 2 minutes and then set aside for 1 hour. Then drained and used). Finished it off with a lot more spices including cumin, chili powder and cayenne pepper. Can't wait to try it again for our next football-watching party!

Spicy Grilled Shrimp

Delicious! We thoroughly enjoyed the dish. We prepared it as stated and thought it was too salty. Next time, we'll cut it in half. The spiciness was just right though. This recipe is a keeper!

Cajun Baked Catfish

What a tasty, guest-ready recipe! Used catfish I bought on sale and froze away for a good recipe and happened across this one.Per other reviewers, I substituted garlic powder for garlic salt, added an egg to the ingredients and then coated the fish in this mixture and then bread crumbs. It came out with a sharply favored coating and very moist fish. My husband loved it!

Apple Crisp II

This is a 5-star dessert that I have made every fall. We use Cortland apples and dark brown sugar, serve it with vanilla ice cream and get rave reviews every time we make it. One tip: don't cook it until you are ready to serve it. Squeeze a little lemon juice over the apples to minimize browning.

Moroccan Tagine

This is now a favorite dish for our now healthy food oriented family. We've made this recipe about 8 times and it has been delicious every time! It is very forgiving so feel free to round up or down as ingredients are available. What we like to do: use dried garbanzo beans that we quick soak, chop everything about the same size, use extra garlic, cook chicken over low-medium heat so it stays extra tender, and add a dash of cinnamon. Plus, we double the recipe so we can freeze a batch for future meals. Truly delicious. Thanks for sharing!!

Spicy Garlic Lime Chicken

Deelishus!! As readers suggested, doubled the rub, added a big shake of garlic powder, then added it to a plastic bag with 2 T of olive oil, juice from one lime and a handful of chopped cilantro. Butterflied 3 chicken breasts, added it to the bag and marinated all day. Cooked it on the grill and it was GREAT. We kept on going back to sneak in just another bite. Will definitely make again. Thanks!!

Best Steak Marinade in Existence

Unbelievably good. Tasted like it was from a restaurant. Followed recipe as is but shortened time so it was still raw in the center. Kids ate the more cooked areas, adults enjoyed every part. Tuna-riffic!
