Joy's Prizewinning Trifle

I have made this twice. Once for New Year's and once for a work event. It was a big hit. I use the cheesecake instant sugar free pudding mix (3 one ounce packages), no fat sour cream, light whipped topping and milk (to make the pudding according to package directions). I also us kiwis, strawberries, and blueberries. However, I tend to change the fruit to what is on sale and it still turns out great. I have also made this using regular ingredients with more fat and no one could tell the difference. Go with the lighter ingredients.

Buffalo Chicken Dip

I mix the cream cheese, dressing, buffalo wing sauce, and stir in the cheddar cheese. Meanwhile, I have been slow cooking chicken breasts. Shred them, stir it in, and then zap it in the microwave.

Slow Cooker Ham

Looking at what other reviewers were saying about what type of ham to to buy and what not to buy, I was a little nervous. I bought a 7 lb spiral cut ham. Used the brown sugar and a can of pineapple. I cooked it for 6 hours and covered it with foil. It was perfect. All the juices cooked around it. It was a huge hit!

Overnight Blueberry French Toast

I used strawberries the second time I made it. I used a whole package of frozen strawberries for the bake and another package for the sauce. Everyone loved this! I followed the recommendations made by the other reviewers! I made it with blueberries as well for a facutly breakfast. Everyone wanted the recipe!

French Onion Soup V

This was a great recipe. Changes I made: 1. Instead of water I used chicken stock (I read in a gormet cookbook that using both chicken stock and beef stock was the best. 2. I used cooking sherry instead of traditional white wine. 3. I carmelized the onions. Great recipe!

Berry Tiramisu Cake

This was very good. I used strawberries and blueberries. I orginally got light cream to make my whipped cream, but heavy cream worked a lot better. I didn't have time to let the sauce really cool before I put it on the cake, but it didn't seem to make a difference. My family loved this.

Slow Cooker Chicken and Dumplings

Very Good Dish. I used 1 cream of chicken and 1 cream of cerely. I used onion, 4 cloves garlic, salt, pepper, carrots, and parcley but for my taste it still needed something. I will add more spices next time. My dumpling took 1 hour and 45 min to cook through. Will make again.

Cowboy Mashed Potatoes

My boyfriend really liked it. I didn't as much. I did change the recipe some; I added sour cream, peas, and yellow corn instead of white and omited the carrots.

Champagne Cake II

This is one of the best cakes I have ever made. It does make a lot of icing so be sure to use an extra deep pan. The disposible ones work well.

Almond Coconut Chocolate Cake

I made this cake for my boyfriend and his brother. They loved it. It was gone it two days. Yummy. The icing actually spilled over the cake and onto the counter. There was a bit of clean up. When I make this cake agian , I am going to do it in layers and put some of the marshmellow topping bettwen the layers.
