Lemonade

I just made a batch of this. I used Meyer lemons and measured the juice. I used 1 cup of lemon juice along with the water and sugar stated in the recipe. It turned out very well. Hope this will be helpful to others.

Mom's Baked Egg Muffins

This was a great idea! I made these this morning. I used large eggs. One of them overflowed because there was not enough space for it. I now know that you must really press the bread into the pan to make as much space possible for the filling. Due to my own error, I forgot to put the bacon in before adding the egg. After putting in the egg, cream and salt and pepper over the toasted bread, I baked these for 10 minutes. Then I pulled them out of the oven, added the bacon and mozzarella (had no Cheddar) and baked for another 5 minutes, rotating the pan, as I noticed the eggs in back of the oven were cooking faster. They were beautiful! The "red" of the bacon and the "white" of the cheese were gorgeous! These muffins looked like flowers! Also, I changed the ratio of butter to maple syrup: 2 tablespoons of butter to 1 tablespoon of pure maple syrup and it worked out well. I served some warmed Philadelphia Lemon & Herb Cooking Cream diluted with a little milk on the side for those that wanted a touch of richness (like Eggs Benedict!). Fresh fruits completed the plate.

Oyakodon (Japanese Chicken and Egg Rice Bowl)

Great recipe, except for the Jasmine rice. Use Calrose instead. When we make this, we rehydrate dried shiitake mushrooms and use the soaking water for part of the dashi. It gives it a boost of flavor. Then slice the shiitakes (discarding the stems) along with some bamboo shoots and add with the onions when cooking. My mom was born and raised in Japan. As a child, this was one of my favorite dishes. I still enjoy it today.

Citrus Turkey Brine

This was fabulous! Before roasting the turkey I stuffed the cavity with the fruits from the brine. I also added a large sprig of rosemary both in the abdominal and neck cavities. I rubbed olive oil on the skin and sprinkled with some kosher salt. Everyone agreed that this was the best turkey ever! The meat was so moist and flavorful! Absolutely wonderful!

Oatmeal Waffles

Heavenly, heavenly, heavenly!!! I did not have buttermilk, so I used plain non fat yogurt instead. I had overripe bananas which I smooshed into the batter and added a teaspoon of vanilla. I made pancakes which were out of this world! They were so moist and wonderful I could not stop eating them! Next time I think I'll add some cinnamon too!

Oatmeal Apple Muffins

Fabulous receipe! The only change I made was to use half whole wheat and half regular flour. I also used dried cranberries instead of raisins. The texture was wonderful and there was sweetness, tartness and crunch all rolled into one. I used paper liners sprayed with Pam and baked at 350 (instead of 450) for 20 minutes. Thank you so much for a wonderful recipe!

Steak Tip Marinade

I did not have garlic pepper, so I substituted garlic salt and added freshly ground pepper. I used a london broil and cut it into 3 pieces before marinating for 8 hours. This was wonderful! The marinade is tasty and tangy and just delicious! I will try it next time with the garlic pepper.

Best Ever Meatloaf II

Good flavor, but it fell apart. Next time I will add some eggs to hold it together. I topped it with salsa and stuck it back in the oven for a few minutes after turning it off to heat the salsa.

Southern Grilled Barbecued Ribs

Wonderful recipe. Instead of grilling, I added 1 1/2 teaspoons of liquid smoke into the sauce.I drained the vinegar liquid and baked the ribs in some of the sauce for 20 minutes, then ran them under the broiler. Delicious!

Mexican Lasagna

Great recipe. I increased the cheese and salsa (Personal taste). Next time I think I will add sliced olives and sour cream to the layers before baking. Tasty and perfect when served with a tossed salad!

Sicilian Ricotta Cheesecake

Made this cheesecake with 2 15 oz tubs of ricotta, substitued the 2 tsp of orange rind with 1 tbsp of lemon rind and eliminated the cinnamon. I also decreased the flour by 1 tbsp, substituted the sugar with 16 packets of Sweet and Low and used 5 extra large eggs instead of 6 regular eggs. In a preheated oven, I baked it for 5 minutes less than called for. It was perfect! No sinking in the middle and beautifully browned around the edges. Wonderful served with a strawberry sauce!

Chipotle Shrimp

Instead of shrimp, I used chicken drumettes. Brown them until the skin is crisp and cooked through. Combine sauce ingredients and add 2 T. honey to balance the saltiness and spiciness. Dip drumette pieces while still hot and coat with sauce. Serve as an appetizer with a cold beverage. Addicting!

Awesome Pasta Salad

Great recipe! Took it to a potluck supper. Everyone enjoyed it. It has a wonderful combination of flavors and textures. The only thing I did differently was add a little more dressing and substitued grape tomatoes instead of the cherry tomatoes.Thank you!

Awesome and Easy Creamy Corn Casserole

This was a great recipe! I was not able to find the 8.5 oz package of dry cornbread mix so I used (3) 6.5 oz packages of Golden Corn and Muffin Mix (Betty Crocker) and doubled the other ingredients. I poured everything in an 11x14 pan and baked for the same amount of time. It was wonderfully moist and everyone enjoyed it! Super recipe and so easy to make!
