Eclair Cake

A great crowd pleaser, and so easy to make. Melting the icing in the microwave for 30 seconds so it would pour was perfect. It sat in the fridge for 18 hours before being served and the graham crackers were still just the right texture - soft but in tact enough to be yummy. I used classic chocolate icing, but I think milk chocolate might be nice too.

Chicken Tikka Masala

WAY too much salt, but otherwise a good tasting recipe. The second time I made it, I reduced the marinade to 1 teaspoon salt, then added salt to taste for the sauce - about 1/2 teaspoon. Don't salt the sauce until after the chicken is added as it brings plenty of salt with it. I also used fat free half & half instead of cream the second batch, which worked fine.

Chicken Salad Balsamic

This is really delicious! I left out the celery and used 1/2 cup finely chopped red onion instead of the green. I also switched measurments and used 3 Tbs olive oil, and 5 Tbs balsamic vinegar. I served it on top of a green salad, which then didn't need any extra dressing. A great healthy and unusual alternative to mayonnaise-y chicken salad; I'll be making it again next time i picnic!

Candied Chicken Breasts

Absolutely the yummiest and most tender chicken I have ever tasted, whether cooked by me or someone else! (and I'm usually very bored by chicken breast dishes) I suppose the breading could be skipped, but I wouldn't because it soaks up all the sauce and keeps the flavor on the chicken.

October Apple Pie

Trying this recipe may have been a mistake as I've had to bake one almost every week to fill my family's requests for MORE! I use granny smith apples, so I don't decrease the sugar as some recommended and the flavor is perfect. If you use juicy apples, a little extra flour will keep the pie from getting runny.

Currant Jelly Wiener Sauce

Fantastic! Every bite was gone after the first hour of my party, and there were only seven guests. The recipe was perfect as is; it tasted a bit too mustard-y at first, but that mellowed with cooking.
