Chili I

I made this recipe for an informal chili "contest" among friends and was disappointed that the flavor was too sweet. However, when I pulled the leftovers out of my refridgerator the next day, the flavors had mingled and mellowed into something I can only describe as fantastic! If you're making the chili to eat the same day, decrease the sugar, by all means. But if you've got the time, let the pot chill; the result is well worth the wait.

Burrito Pie

This dish was a little bland for me (I like *spicy* food), but my husband really loved it. Keep an eye on the number of servings, though; this recipe makes a lot and I found it didn't keep very well as leftovers (the tortillas got all soggy).

Hungarian Mushroom Soup

This soup was fantastic, very rich and delicious, but extremely easy to make. Much more interesting than the usual cream of mushroom soup. I will absolutely be making this again.

Hot German Potato Salad III

This recipe duplicates that delicious potato salad you can usually only get in German restaurants. I loved it and have already made it three times. It goes well with anything, from burgers to bratwurst.

Cheesecake Supreme

The flavor of this cheesecake was excellent, but I should have read the previous notes on baking times. I was on the phone when the timer went off, so didn't bother to test the cake; I just turned the oven off and propped the door open. The entire center of the cake was still very loose. I took it out and let it cool throughly and then refridgerated it overnight. The texture improved dramatically (it wasn't so liquid-like), but never firmed above a fluffy whipping cream consistency. I'm going to give it another try, though; the flavor really was fantastic. I put a 1/2 tsp of almond extract in the batter and a little cinnamon in the crust, just to add interest.

A little too rich for my blood, but my husband thought it was great. Will definitely make again. Followed other's advice and added a little cream to keep it from being too dry.

Blueberry Cream Muffins

Very lovely and fluffy. So easy to make; I live at a high altitude, and this is one of the few muffin recipes I have made from scratch that didn't flop. Will definitely be making these again.

Award Winning Soft Chocolate Chip Cookies

Very soft and gooey. I used 1/2 white chocolate and 1/2 semi-sweet chips. I took them to a potluck and all six dozen were gone in twenty minutes!

Golden Rum Cake

Should have read the previous reviews and cooked the rum with the glaze. I made the recipe exactly, and the rum flavor was overwhelming! Still, the recipe overall is great; just needs a bit of tweaking.

Coconut Curry Tofu

It was a little bland for me (I like my curry spicy and strongly flavored), but my husband went crazy for it. He says it is "fabulous." I'm just pleased I found a vegetarian recipe that he'll eat without complaining. :)

Split Pea and Ham Soup I

Simple, but excellent. I used the leftover ham bone from our christmas dinner. Make sure you cook the soup over low heat and keep an eye on it, stirring occasionally. It can stick to the bottom and burn.

BUSH'S® Best Red Beans and Rice

I messed with this recipe a little bit. I used uncooked hot italian sausage and browned it as a first step. I also used plain canned tomatoes and added dried basil after the fact. It came out excellent! My husband loved it, and he's a picky eater.

Simple Spinach Lasagna

Too much spinach! Don't get me wrong, I like spinach, but you could hardly taste the cheese and tomato sauce. I think I will make it again, but I'm cutting the spinach in half and increasing the spices so it's not so bland.
