Beef Enchiladas II

Followed a suggestion to season ground beef with taco seasoning as it cooked; really helped boost the flavor. Also served with chopped cilantro, diced tomato, and sour cream. Very tasty.

Sloppy Joes II

This recipe is BORING. It has potential, but you'd need to add a lot of different flavors to make it better. I still prefer Manwich. I may try it again, but I'm going to have to tinker with it a lot.

Antipasto Pasta Salad

This turned out really nicely. A good blend of flavors and textures. My husband even ate the tomatoes, and he hates tomatoes! The flavor was definitely better after allowing it to meld somewhat; ignore the instructions and marinate if you've got time.

Caramel Brownies III

These brownies turned out really rich and fudgy; I could have cut them even smaller than I did. They got rave reviews at the party I took them to. I used devils food cake mix rather than just plain chocolate--it seemed to add something.

Broccoli and Cauliflower Casserole

Tomato Soup I

I really love this receipe and have made it several times. I usually have to adjust the flavor a little bit, as the sugar can sometimes seem overpowering. However, a little cider vinegar will offset it nicely. I usually add some black pepper and maybe a touch of cayenne if I want a little extra heat. You can also add some dried basil and get a wonderful tomato basil soup. I also usually puree about half the soup in my food processor so that I get a nice textural variety.

Simple Spinach Lasagna

Too much spinach! Don't get me wrong, I like spinach, but you could hardly taste the cheese and tomato sauce. I think I will make it again, but I'm cutting the spinach in half and increasing the spices so it's not so bland.

BUSH'S® Best Red Beans and Rice

I messed with this recipe a little bit. I used uncooked hot italian sausage and browned it as a first step. I also used plain canned tomatoes and added dried basil after the fact. It came out excellent! My husband loved it, and he's a picky eater.

Split Pea and Ham Soup I

Simple, but excellent. I used the leftover ham bone from our christmas dinner. Make sure you cook the soup over low heat and keep an eye on it, stirring occasionally. It can stick to the bottom and burn.

Coconut Curry Tofu

It was a little bland for me (I like my curry spicy and strongly flavored), but my husband went crazy for it. He says it is "fabulous." I'm just pleased I found a vegetarian recipe that he'll eat without complaining. :)

Golden Rum Cake

Should have read the previous reviews and cooked the rum with the glaze. I made the recipe exactly, and the rum flavor was overwhelming! Still, the recipe overall is great; just needs a bit of tweaking.
