Bran Muffins III

Reviewed: Mar. 16, 2008
I found them flat tasting. I can see why some have added a few spices and brown sugar. They are moist and easy to make.

Pizza Dough II

My family enjoyed this recipe very much. The crust came out crispy and light. I was able to get three nice sized pizzas from this recipe. Easy to make.

Banana Banana Bread

Reviewed: Jun. 16, 2007
Very easy to make. I followed the recipe and found it needed a little more zip. I too would add vanilla, cinnamon and nuts next time to give it some punch. Will make it again.

Honey Butter Yule Ham

Reviewed: Nov. 19, 2006
Ham is not my favorite meal. My family loves it so every so often I make it. I have to say this was one of the better hams I've tasted. I would make this again. The butter and honey gave the ham a wonderful flavor. Tender and didn't taste like a sugar glaze. Very good.

Whipped Cream Frosting

Reviewed: May 21, 2005
This is very good. The cream cheese gave it a great consistency. Very easy to make. I added melted chocolate to mine. Cool the chocolate before adding. Makes more than enough frosting for a two layer cake.

Mocha Icing

Reviewed: Feb. 21, 2005
Easy recipe to follow. The icing never whipped enough to become fluffy even after 10 min. It needs to stay in fridge or it seems to "melt". I cut back on the powdered sugar and it was still on the sweet side. Nice flavor, may try again if only to see if it comes out fluffy next time.

Too Much Chocolate Cake

Reviewed: Feb. 21, 2005
Very good chocolate taste. I cut back on the oil, only used a little less than 3/4C, cake was still dense and moist. It's not too sweet which is nice when putting an icing on it. I would make it again.

Very good butter cookie. Easy to make. I too added vanilla instead of the almond extract. Would make again.

Pecan Tassies

Reviewed: Dec. 25, 2004
The dough for the crust is a little flat tasting. Good pecan mixture, makes a lot. Don't make the crust too thick or you will have more crust than filling and the filling will over flow. I would spray a little pam to make removing easier. Easy cookie to make.

Collards

Reviewed: Dec. 5, 2004
Very good recipe for collard greens. I did not use the potatoes, I added cidar vinegar, chicken stock and crushed red pepper flakes to the boiling water. Added garlic along with the onions and bacon. This recipe was a very good starting point and I'm glad I found it. Thank you

Easy Beef Stroganoff

Reviewed: Nov. 29, 2004
I made a few changes to the basic recipe. I added worcestershire sauce, combined everything, topped it with bread crumbs and parmesian cheese, baked it in the oven for about 15min. This was a quick after work dish. Just add a salad and biscuits. Very good.

J.P.'s Big Daddy Biscuits

Reviewed: Oct. 18, 2004
Excellent biscuit. Mild flavor, moist and worthy of the name BIG Daddy Biscuit. Perfect for any topping you like. They do not brown which keeps them soft. I increased mine to make 12 servings. Still perfect.

French Buttercream Frosting

Reviewed: Sep. 6, 2004
The shortening taste is out front. It gives it a greasy texture and after taste. I did use less shortening and added more sugar to mask the taste. The frosting wasn't fluffy or light. The recipe makes more than enough to frost a 8" cake. Have to say my children really liked it.

Lemon Custard Filling

Reviewed: Jul. 4, 2004
I used less cornstarch than the recipe called for and it still had a "raw" cornstarch taste. The balance seems to be off. It did have a nice lemon flavor. I would adjust the cornstarch again, and try cooking it longer to blend the flavors better.

Butter Cream Frosting II

Reviewed: Jun. 20, 2004
Very easy frosting. I too used all butter and added chocolate. This is a very forgiving recipe. You can add all of the sugar or cut it back depending on how sweet you like your frosting. I used 31/2 c sugar and 1c powdered cocoa. Beat well, 5-8 min. for a smooth frosting.

Very good. The batter was a little too sweet for me so I didn't use the sugar on top. Very moist. I also used frozen blueberries.
