About this Cook
My interest in cooking started with Giada DeLaurentis...I watched her shows while I was recuperating from surgery in April 2010. Now, I'm an avid fan of Food Network. Prior to "meeting" Giada, my dinners were eat-out, take-out or microwaved. My family is in shock....they thought it was a phase that would last until I returned to work...NOPE. Now I LOVE to cook. I've made homemade raviolis, fantastically delicious sausage & peppers, totally fab pot roast, chic rollatini (yum)and a healthy version of Alfredo sauce.... My kids actually ask me to cook their favorites! My mom is totally shocked....
My favorite things to cook
I love finding healthy ways to tweak recipes w/o losing the flavor. I really like experimenting with different recipes for the same protein; like ribs (no healthy way to make these :) and pot roast...luv to make different pastas and my new specialty, as per my kids, is Chili
My favorite family cooking traditions
My mom and my Nana are/were great Italian cooks. I still need to master the Sunday Gravy (pasta, which is called macaroni in my family and Nana's famous meatballs - she's gone now, but she gave me her recipe 20 years ago b/c she always thought I'd cook eventually...I'm sure she's looking down on me and she's very proud.

A peach-glazed chicken recipe I got husband said it was "gross".....he took 2 bites and then we ordered pizza. I think we didn't like one of the spices in the recipe but there were so many in it, I'm not sure which one??? Not really bad for someone who just started cooking!!

Brandy Chicken
I followed the recipe exactly, and while the chicken was nice & moist, the dish had absolutely no flavor. My 14-yr old asked if I forgot "the seasoning" and then doused it with tons of salt & pepper. Hubby said "well, at least the chicken is moist". I was so disappointed - I really wanted to like this dish as it was easy & I could have used another go-to chicken dish :(

Penne and Vodka Sauce
I've been making this sauce for years. I've used several different pastas - penne, tortellini,raviolis, anything that holds sauce well b/c its so delish (oh, long fusilli works very well too!) I tried it this time with the pancetta as the recipe was written, it was good, but I prefer prosciutto (that's what mom & nana used). I also add minced onion to the prosciutto while sauteing' use 1 tbls butter and I (not nana)use fat-free half & half (absolutely no difference. It's also great w/o the prosciutto & you can add shrimp as suggested or grilled chicken strips (my fav!)

Easy Chicken Casserole
EAR: "EXTREMELY AWESOME RECIPE" (base); very customizable! Try w/Broccoli & Noodles; or, use l/o Turkey, cut Green Beans & top w/Stuffing; or, Mexican-style: add Salsa, Jalapenos, Beans & top w/crushed Tortilla Chips; "Loaded Baked": in lieu of pasta/rice, use Potatoes, top w/ Cheddar & Bacon; Italian-style: sauteed Zucchini & diced petite Tomatoes, topped w/Mozzarella & Bread Crumbs; Garlic Lovers: Add Spinach (sauteed on EVOO & Garlic, Bow Tie pasta topped w/crushed Garlic Melba Toast. I can probably make a month's worth of casseroles w/this base!! THANKS SO MUCH!!!
