Melissa's Turkey Meatloaf

Made with substitutions...Added 1 chopped red bell pepper, no onion, ised two tablesppons minced garlic (instead of 3 garlic cloves), no milk and one small can tomato paste smeared on instead of canned soup (too much sugar!). Served with ketchup on the side. It was moist enough without the milk...also, it is important that it be covered tightly while cooking, otherwise it doesn't cook as quickly because it is not in a loaf pan. Turned out delicious! I can hardly tell it is turkey.

Oregon Salmon Patties

Delicious! Changed it around of course...Used minced garlic and onion (not fresh), omitted parsley (didn't have any), used Spicy Mustard (not dry), added dill and lemon pepper and used olive oil instead of shortening. Oh and I used twice as many bread crumbs as suggested. I found the 3/4 cup of liquid from can to be too much. I suggest adding this last or a little at a time so it isn't too moist (otherwise it is a pain to make patties). They were great! Even my nine-year old loved them (which is almost a miracle). Also, used the "lemon sauce for salmon patties" recipe as others suggested and that was great too!

Easy Alfredo Sauce II

Subbed half & half and Three Italian Cheese blend (parmesan, reggiano and asiago)...it was a bit lumpy but still delicious. MUCH better than the canned stuff and not too complicated. I will try again soon and hopefuly will perfect the consistency....

Shredded Tri-Tip for Tacos in the Slow Cooker

Turned out great! Used leftover meat AND sauce to make delicious enchiladas the next night! The sauce tastes almost like the La Victoria stuff I normally use with enchiladas (Medium red sauce). I add a bit of chocolate powder (Nesquik or in a pinch hot chocolate mix pkg) to make it less spicy...yum!

Apple Pie Muffins

OMG taste SO much like Apple Pie! I will make these again and again! One important note...on my 2nd batch I was out of butter for the topping...and have to say...margarine does not make good crumb topping! Must use butter!

Chocolate Cake II

Delicious cake! I didn't even get a taste...sent with my hubbie to work and it was devoured quickly and with great pleasure! LOL used the frosting recipe on Hershey's unsweetened cocoa box and it too was excellent!

Chicken Breast Stuffed with Spinach Blue Cheese and Bacon

Subbed Feta cheese for the blue cheese (I prefer feta) and not only did everything turn out perfect, but I fell in love with hot, melted feta cheese! Yum!

Polish Sausage Kraut Skillet

I was a little unsure of this recipe, but wow! It turned out delicious! I will make this again and again! The only changes I made were: chicken for beef bouillon (didn't have any) and I used dried minced onion and packaged minced garlic instead of the fresh stuff...either way, it was a great meal!

Iced Pumpkin Cookies

These are my absolute favorite pumpkin recipe ever! (And I love anything pumpkin!) No changes... one suggestion for a varied final product: instead of drizzling the glaze, you can dip the top in it (and they will come out like the main photo). Either way, they are delicious!

White Chocolate and Cranberry Cookies

My new favorite cookie! Just a note... this recipe is printed on the back of the Craisins bag using white chocolate chips. I also tried this with crushed walnuts...STILL DELICSIOUS!

Irish Chicken and Dumplings

Yummy! Subbed one can of creamy chicken soup with one can of chicken broth (and one cup less water) and I followed the dumpling directions on the bis quick box. I also used my own version of "poultry seasoning" as I didnt have any prepared.
