Spaghetti Squash I

This is a great basic recipe that I changed a little. First, I put the whole squash in the microwave (punched a few holes in it) for a few minutes until I was able to slice it down the middle. Then I put about a cup of water in a glass baking dish and put the squash half sides down and baked for about an hour. While thats cooling, I sauted a whole chopped red onion, about 2 cloves garlic, some fresh zuchinni, fresh chopped asparagus, and a can of fire roasted tomatoes (with the juice). Once the veggies are mostly cooked, I put a lid on it so that the juices dont evaporate. Then I scoop the spaghetti out and toss in with the veggie mixture so that its all coated together. Then I put into bowls and add a bit of the feta and basil and toss!

Slow Cooker Lasagna II

I thought this was really good, and very easy!! I basically followed the recipe, but I used ground turkey and no-boil noodles. I liked the ease of no-boil, but since you are making this in an oval crockpot, I had to break up the hard noodles like puzzle pieces to fit them in, so perhaps using boiled noodles would be better so they can be soft and shape to fit the crock. Other than that, I added a 1/2 chopped sweet onion, minced garlic, and some seasoning to the meat/sauce mixture. Made some garlic bread and it was a great meal...will definitely make again!!

Goat Cheese Arugula Pizza - No Red Sauce!

SO GOOD!!! Goat cheese and arugula are 2 of my favorite ingredients, so this recipe was right up my alley! I used a thin crust pizza dough, so it was more 'flat bread pizza' than traditional pizza. I also used only 4-5oz goat cheese (plain, not seasoned) and that was enough. I only needed 2 roma tomatoes b/c my crust was on the smaller side, and I took other recommendations and tossed the arugula with lemon juice, EVOO, salt, and pepper before topping the pizza, and I think that made it even better! Oh, and save yourself all the hassle and use minced garlic instead of cutting garlic yourself! Cannot wait to make this again!!

Slow-Cooker Chicken Tortilla Soup

AMAZING!! We thought this was better than any restaurant tortilla soup we have ever tasted! I basically followed the recipe, but I used 1lb frozen boneless chicken breasts and put them in the crock pot frozen. I cooked it all for about 6 hours, then took the chicken out, shredded it, and put it back in for another 2 hours. I also used 2 cans chicken broth and omitted the water. I cooked 6 servings of brown rice seperately and then added it to the pot for about a half hour at the end. It made the soup more hearty and perfect for a full meal. Also, fresh lime juice added to each bowl along with a few strips of tortilla strips (I used Mission tortilla strips instead of making my own), and a dollop of sour cream and a pinch of mexican shredded cheese! Perfect!!
