Rich and Creamy Roasted Eggplant Soup
Really yummy! I used a bit less broth (2 cans) and I used veggie broth. I didn't have thyme so I used coriander. I also added some cayenne pepper. The eggplant takes longer to roast, next time I'll put it and the onions in first, then add the tomatoes and garlic halfway through. The goat cheese on top is so awesome!

To Die For Blueberry Muffins
These came out heavy and dry with very little flavor except where there were blueberries ( which are awesome because they're blueberries). I also dislike the crumb topping which made a mess of burnt sugar all over my muffin tin and only added texture, not much flavor. Plus I had to eat them over the sink because it falls off every where. My search for the perfect blueberry muffin must continue.

Caley's Classic Zucchini Bread
This came out great! Moist and flavorful. I made some alterations; I added 1/2 c. grated carrot & the zest and juice of 1 lime. When it came out of the oven, I topped it with a lime glaze made by stirring 1/4 c. lime juice with 1/2 c. sugar in a saucepan until it boiled and the sugar dissolved. I brushed it all over the tops right out of the oven and let it solidify. I made muffins, too, 18 minutes in the oven was perfect.
