Superb Sauteed Mushrooms

I am with Sarah Jo on this one. I used button because that is what I had and REAL red wine with Penzey Shallot Salt. Decreased both olive oil and butter by TBS an they were still delicious.. And like another reviewer, that was dinner and ate them all.

Chili Burgers

As I make my own chili sauce, and use a similiar recipe of beef and sausage for my meatballs I had to try this. It's a winner. I made and froze the rest of the patties. It's even better with some chili sauce on top. I will make again and do slider size for appetizers. thanks for recipe

Navy Bean Soup

ditch the potato flakes. When you add you onions add rest of veggies and spices. Cook 1 1/2 and remove ham hock. Puree half of the soup and put back in soup and it will thicken the rest of it. Add you ham back in.

Foolproof Rib Roast

Got this recipe back in 80's from Womens Cattlemen Association.. It will work on any cut of meat, regardless of weight.... I have made several times with anything from chuck to beef tenderloin. DONT OPEN THE OVEN... THAT IS THE SECRECT.. make sure your meat is at room temp before you put in oven. If you have people that are the "well done" "dead on the hoof" type you should add some time to intial cooking. People can't believe this method works.. It does if you do it right., everytime.

Turkey With Rye Dressing

I used this last year as I was looking for a rye bread stuffing.. I used the basic dressing ingredients, butter, onions, celery, EGG, poultry seasoning and it was very good. To me garlic does not belong in dressings/stuffing. But I could not cook without it. I have done the apple/pecan stuffing for pork. Don't know if I would add for this but may try it this year. ... But it was delicious and we enjoyed at dinner and after on our turkey/stuffing/cranberry sandwiches.

Oregon Salmon Patties

I gave this 3 because people continue to add onion to seafood... and it overpowers the flavor of the seafood. If I am going to spend money on a salmon or crab cake, I want to taste that wonderful seafood, not onion flavor. I made these with a small shallot and also with fresh chives.. with those it would be 5 stars

Sweet and Spicy Sweet Potatoes

2011- I made this mix and gave as gifts for xmas, with the 2 potatoes and recipe... it was a big hit. I have made and passed this recipes onto so many people because it is fantastic... I make many batches when company is coming because 2 potatoes will not cover it. I eat a single recipe by myself. Great job.

Green Bean and Mushroom Medley

Everytime I make this I love it better. And keep tweeting it a little and I have yet to serve it to guest that they want recipe. I steam the green beans and carrots. I eliminate at lot of butter to 1 tbs and 1 tbs of olive oil. I dice the onions they fill in better that way. Add roasted red peppers or just red bell pepper. And the amount of salt in here will kill you. I use garlic or garlic powder, no salt, 1/4 tsp of a seasoned salt. I get my spices from Penzys Spices.com and I add a 1/2 tsp of Tuscan Sunset.it completes the flavor without the salt. This is my veggie day dish...big pan of it and get it all. 1/5/15, just read my review and was wondering what to do for dinner..I will use this recipe and convert it into a soup with spinach tortellini, shredder leftover rotisserie chicken, and add some chicken broth. I will then try on neighbors and bet it will be a hit. This is my go to veggie day dish. Just with the few adjustments this is a really healthy dish. And believe me I love butter and all that good stuff like anybody else, but "THE MOM" had a wonderful base to start with. Thanks MOM...

Taiwanese Pork Chops

I used boneless pork chops. I increased the wine to 2 tbs. These were so good that last night I made it with boneless chicken breast cut into nuggets and toss in baggie with corn starch..then browned. Fantastic. Double the marinade and while meat is resting bring to boil and reduce and use as sauce.

Easy, Cheesy Tortellini Bake

Very VERY good. Cut back on Alfredo 3/4 cup for this much pasta. I have made with 2 cans of drained clams with big sucess. CAN'T STAND PEOPLE THAT CHANGE WHOLE RECIPE AND THEN RATED 5 STARS.. SUBMIT YOUR OWN RECIPE INSTEAD OF RATING. URK'S ME TO DEATH AND PEOPLE KEEP DOING IT.

Pasta Hot! Hot! Hot!

This was the "Italian can't eat meat on Friday dish or the "Basic Italian everything in the house dish" I make it all the time, order it out in Italian restuarants that I know I am sitting at an Italian table. My Italian friends laugh and say this is the "poor mans dish" poor or not it is a wonderful dish. Make it with Penne, broccoli and holds all the flavors better than spaghetti. This is my favorite Italian dish. Basic..

Beaumont Ranch Potato Salad

I have been making potato salad this way for years. Use to make with the mix but with the market of great bottled dressings it makes it much simpler. Every time I make I add a different kind of Italian type dressing , like Roasted Red Pepper, Light Asiago and Parmesan, Balsamic, while they are hot and let sit to absorb the flavors before adding mayo, adds a different flavor. Always come home with an empty bowl. Also, must be a Northern thing, we add hard cooked eggs which just add to a great flavor and texture. This recipe stands alone but when short on time, this is an alternative. Wedo not add dill pickles, the dressing takes care of that.

Bacon Mushroom Swiss Meatloaf

I DO NOT LIKE PEOPLE WHO CHANGE THE WHOLE RECIPE. WRITE YOUR OWN AND SUBMIT IF YOU HAVE TO MAKE THAT MANY CHANGES. This was great. My favorite burger is mushroom swiss, which I only order out as I can not grill where I live. The only change I made was more mushrooms and a dash of worcestershire, and bread crumbs vs corn flakes. I took leftovers to work today and you are a hero, Nicolette.. everybody loved it.

Spinach Chicken Parmesan

People complained of bland. So I read all the reviews and this was one great dish. I pounded and marinaded chicken in no fat zesty Italian dressing. I sauted regular onions and garlic in butter and added a lb. of sliced mushrooms and sauted down. Added flour, milk, and spinach,did not increase flour or milk as there was juices from mushrooms. Took half of the breading material and dredged the chicken. Cook 15 mins and then added the spinach mixture and the other half of breading mixture and baked. With the mushrooms added, it was a nice solid mixture over top of breasts. Great, will make again.

Spinach Dip with Water Chestnuts

I make all the time. But there is a secret.. most people do not squeeze their spinach dry. Mine is "squeeky" dry. That is what make's it a success. How many "runny" spinach dips have you endured. People ask me to make and I tell them they can make, but want me to make... The only diffence I make is if some people are onion intolerable. I use fresh or dried chives.

Microwave Oven Peanut Brittle

I have been making this since 1984, right out of book that came with my microwave at that time. Someone was selling at work and said did in microwave.My thought he can,I can.I just made 3 batches Friday night and they were in the mail Saturday. Three batches today for work. I do a little different. Sugar & syrup for 4 minutes, then stir in peanuts and do 3-5 minutes, then add a TSP NOT TBS of butter and vanilla for 2 mins, then the baking soda. And like the other review after first time I made I went and got a 8 cup pyrex measuring cup with handle to do this recipe. This tastes better than commercial and is simple. I call it my "12 minute brittle". I change nuts and extract for change of pace.

Lima and Navy Bean and Ham Soup

Put the beans covered in water,bring to boil, boil 10 minutes, leave covered and sit for an hour.Tenderizes your bean and cuts cooking time in half.
