Easy Beef Stroganoff

I love it! I am always looking for quick, easy dinners. This is perfect. It was a little more bland than it could have been, since I didn't have any beef broth and instead substituted water, but it was still delicious. It's going on my "make again" list.

Spaghetti Sauce

Yum! This was exactly what I was looking for. I cut out processed foods awhile ago, and that means making old favorites from scratch. This is very simple and can be made from things I already had in the kitchen. And it's so easy to add to! I wanted to sneak in some more vegetables, so I added some zucchini and carrots. I also cut back on the spices--half of each was plenty for me. I pureed it to give it a smoother consistency. Paired with some pasta and turkey meatballs, it was delicious!

All-Day Apple Butter

I am an apple butter addict. Seriously, I love the stuff. I wanted to make my own and I finally worked up the courage to do it this past weekend. This recipe was perfect! It was easy and didn't involve standing over a hot stove--which was great, since it was 95 degrees in my apartment this weekend. I halved the recipe and modified it a little (both on purpose and accidentally). I substituted half of the white sugar for brown, since that's just how I like my apple products. I also added twice the amount of cloves (by accident), the result of the labels on my measuring spoons being nearly worn away. But even though my apartment smelled like Christmas, it wasn't overpowering in the final product. I didn't find it too sweet, but I have a huge sweet tooth. I could not stop making toast to spread this on! I probably should have cut down the cook time as well; I ended up with only one pint of really strong apple butter. But it's delicious and I will definitely be making this again!

Salmon with Dill

This was awesome! I'd never cooked salmon before, but found a leftover peice in my freezer and needed a recipe. Since I only had one peice, I didn't bother to measure anything, just sprinkled it on. I did end up putting on too much dill for my liking, but that was my fault. The time given was perfect for my oven. It came out moist and delicious. I will definitely use this recipe again!
