Vegan Lasagna I

I made this yesterday to taste test for my office potluck lunch later this week. In an office of 13, 3 of us are vegan and I want to make a dish that will fill us up but I can also serve to the others that think and have no problem telling us that soy products are disgusting. I made a few changes to suit my taste like using half stewed and half diced tomatoes in the sauce. I used only 1 box of spinach because it is not my favorite and added a diced red pepper for sweetness. For the version I will make for work, I think I'll also add diced portobello mushrooms for a more meaty texture and I'm considering adding some TVP to the sauce to try to trick the carnivors into believing they are not missing out on their precious meat. Thank you for posting this recipe.

Donut Muffins

These do not dissapoint! I do not like the flavor of nutmeg so I decreased it to 1/4 tsp. But it is still very strong. Next time I will elminate it or replace it with cinnamon.

Croissants

This was a really long process for 12 little croissants. The flavor is good but I wasn't able to get the rises out of the dough. The first rise took almost 4 hours so it actually took me 2 days to complete the recipe. The rises that took place in the fridge were minimal in size.

Jamie's Minestrone

I thought the soup was fabulous. I remember when I was a kid my dad would make Minestrone soup and of course I wouldn't eat it - what kid likes vegetables! But now that I'm grown up I don't mind them so I tried the recipe. I made a handful of changes but I though it was great.

Chocolate Chip Cookie Bars

I followed the advice of a previous reviewer and added 2 eggs prior to adding the dry ingredients. Also, since I do not have a 15x10 inch pan I used my 9x13 pyrex instead. I increased the oven to 375 degrees and baked the mix for 27 minutes. The cookies/bars are great. I would suggest to all future persons trying this recipe to add the eggs, otherwise I don't see how their would be enough moisture in the mix.

Fiery Fish Tacos with Crunchy Corn Salsa

I was excited to get home and try this recipe. The seasoning for the fish was super. I didn't make the salsa so I can't comment on it but instead I filled up the tortilla with the fish, shredded lettuce, tomato and a spicy yogurt/sour cream sauce.

Awesome Broccoli Casserole

I liked the recipe but I used 98% FF soup and low fat sour cream and I think it took away from some of the favor that other reviews really like. Next time I think I will add more shredded cheese to the vegetable casserole rather then put it on the top.

Hot Crab Dip

I made this as a Thanksgiving appetizer. The guests all had great reviews for it but husband and I did not like it. Something about the hot sauce didn't seem to combine well with the other ingredients. I will try to experiment with other flavors to see what I can turn this into.

Tomato Alfredo

I liked the recipe as it was, sauce was a light alfredo. Next time, I will decrease the pasta from 1 pound to 12 ounces or so. The sauce didn't seem to go far enought for the entire pound. I did add some flat leaf parsley as a garnish since I had some left over.

Crawfish Fettuccine I

It was quite spicy but the flavors seemed to mix well together. I did use shrimp, scallops, and crab instead of crawfish but it was great. I'm wondering though, why is it necessary to simmer the sauce for almost 40 minutes? I couldn't notice a change in the consistancy of the sauce after the half & half and cheese was added during the simmering process. Thanks for the recipe!

Chili Rellenos Casserole

The reviews for this were excellent so I made it for a dinner party. No one liked it. I must have been thinking that this would be a totally different dish because it was not what I expected. All of the appetizers and side dishes were eaten but almost the entire dish of this was left.

Whipped Cream Cream Cheese Frosting

I made this instead of using the pre-made "tub" frosting and the cake was so good. There was extra left over so I used it on grilled Pineapple slices that I made a few days later. The texture and sweetness it so perfect.

Spicy Tortilla Roll-Ups

I threw a holiday cocktail party and made these. I couldn't believe how fast they were eaten. The only change I made was adding 1/2 of a habanero pepper because I knew that some of the guests like very spicy foods. It was a great addition to my food selections.

New England Clam Chowder I

This was a great recipe, however I was hoping it would have been a little thicker. After reading through a few more reviews I too will try some thickening ingredients. I did use the clam juice in place of the water and thought it was a good addition.
