Crab Salad

This was a very easy lunch, and it tasted great. I made a couple of changes, I used 2 tsp of olive to saute with and omitted the butter. I also added some salt and a dash of garlic powder, and cut the amount of mayo in half. I served it with sliced avocado. Next time I might try subbing finely diced celery for the green pepper.

Grandma's Chicken Chardon

The chicken came out very moist and tender. I followed recipe exactly, but think I will make a few changes for next time. I will double the butter sauce (not very healthy I know) becaue it seems to cook down to nothing. I will add some garlic to the bottom of the pan as another user suggested and add some sun-dried tomoatos. It was very delicious as is though. It goes VERY well with the spinach and orzo salad from this site.

Rainbow Pasta Salad II

I loved this recipe!! I added a small can of black olives and a chopped green pepper. I also put in creamy italian dressing,this being so rich I only needed about 1/3 of the bottle. Will be making this often as it is a great summer side dish!

Eggplant -- Easy, Good and Tasty

I love eggplant, but had no recipes that weren't heavy and full of fat. As others suggested I baked the eggplant before adding the rest of the ingredients. While the it was baking I marinated slices of tomatoes in fat-free italian dressing and place them on top of each piece of eggplant along with the cheese and some fresh basil, then baked another few minutes. I left out the oil completely. What a wonderfully flavored low fat side that will go with anything. I served it with grilled salmon and fresh spinach. Will definately make again!!

Taco Salad I

I didnt like the combined flavor of the taco seasoning and the french dressing. I ended up throwing most of it out. Probably wont make again.

Excellent punch. This is my new favorite. I used fresca instead of sprite or 7-up. It was gone in no time, I should have bought the stuff to make a second round!!! YUMMMM!

Sour Cream Apple Pie I

This was my first attempt at making a pie, and it turned out great!! One of the best Apple pies I've tasted and my husband agreed. I changed a few things. I increased the sugar to 1 C. and used half brown sugar and half white. I also excluded the nutmeg and added 1 1/2 tblsp of cinnamon instead. I also coated the apple with about 1/4 c white sugar and 2 teas. of cinnamon before mixing them in the sour cream mixture. For the topping I double the amount of butter called for. Next time I will try adding a little allspice and cloves. Will make this again often!!

Green Beans for a Special Occasion

These were awesome, and so simple to make. I used frozen green beans, two garlic cloves and slivered almonds instead of pine nuts. My husband who hates green beans tried them, and said he loved it and wanted me to make them again!!! Thanks for the great recipe

Curried Vegetables

I wish there was a half star option, b/c I would give this 3 1/2. Although it wasnt nearly the best curry I've had, it improved by leaps and bounds after sitting overnight in the fridge. If I make it next time I will cook it a day ahead of time. I added onions, garlic and at the very end coconut milk. I double all the spice and probably tripled the salt.

Garlic Pita Bread Bites

These were great. I dont think 10 minutes was long enough to get them completely crispy so I will go for 12 next time. Very good served with any type of dip. Will make again as they are a great alternative to chips.

This salad is very authentic. The only change I made was omitting the green onions, I used regular white onions instead. The recipe is exactly like the one in my middle eastern cookbook, and all my arab friends loved it! Be sure and put the pita bread in right before serving.

No Eggplant Moussaka

MMMM!! This recipe looked perfect for the ingredients I had on hand, and the fact that I lacked eggplant for regular Moussaka. I cut the recipe in half except for the sauce and the tomoato mixture. For the tomato mix I used one can of Italian stewed tomatoes and 1/2 can of tomato sauce. Since I only used two potatoes, the cooking time was cut down by about 45 min. Will make again. Quick Crescent Taco Pie

This was a tasty and quick recipe. I had concerns about a soggy crust but it turned out flaky and not soggy at all. I used nacho cheese doritos instead of corn chips. Next time I'll try reduced fat crescent rolls.

Frog Eyed Salad

I'm so glad I found this recipe. My aunt used to make it and I loved it. It's a wonderful way to get in some Vitamin C, and a pretty healthy/low-fat desert. I used splenda instead of sugar and added bananas before serving. I think it'd be great with some apples tossed in too. Will make again.

Creamy Fruit Salad II

This was a great summer desert. I used low fat cream cheese and nonfat condensed milk. No fruit cocktail, just one can of pinapple with juice and LOTS of fresh fruit. Everyone enjoyed it! Will make again.

Fresh Apricot Pie

Pizza Sauce II

I tried this in a bind (ran out of store bought) My husband and I loved it! I cut the recipe in half since I was making a small pizza, added fresh basil and eliminated the tomato paste (I ran out of that too!) I will be using in place of store bought going forward. YUM!

Tuna Macaroni Salad

Although it's not summer, I had to try this. It sounded so good for lunch!! It was as good as it sounded. I used low fat rasberry vinegarette as the marinade,low fat mayo, and sour cream. I also didnt have celery so added green peppers and eggs instead. YUM! The only modification I might make next time is 3/4 c. mayo and an extra can of tuna.

Groovie Smoothie

WOW! This made an awsome breakfast. I used soy milk, and a small can of drained peaches instead of the banana. I also putin 3 packages of Splenda. This will make a great summer snack or light meal!!
