Ultimate Twice Baked Potatoes

The texture on this was great, not too thick or too thin. ( I didnt use quite 1/2c milk) I also add some sauted green peppers which gave the mixture a nice flavor. Everyone loved them, I'll be adding this one to my list of favorite side dishes.

Frank's Famous Spaghetti Sauce

As another reviewer suggested, I doubled the garlic and added a tsp or more of oregano and basil. I also added a bay leaf while the mixture simmered. Delish! Will definately make again.

Chicken Makhani (Indian Butter Chicken)

This dish was great! My fist attempt at Indian cooking. Simple and delicious. I didnt have garlic-ginger paste, so I added minced garlic and ginger powder, still tasted fine.

Spanish Rice II

This was the best homemade Spanish rice I've ever had! I used two garlic cloves, and jalepeno to saute with the onions, etc. I also used chicken broth instead of water. The amount of Chili powder suggested was perfect (I love spicy dishes though). Will make again!!

Texas Ranch Chicken

After reading the recipe, I thought it needed some color (everything was white) so I browned the chicken just a bit on both sides, and threw in some green pepers and 1/2 jalepeno to saute with the chicken. I then mix a bit of tabasco with the ranch for an added kick, and added a bit of cheddar for extra color. This recipe was sooo easy, and VERY good!

Tuna Macaroni Salad

Although it's not summer, I had to try this. It sounded so good for lunch!! It was as good as it sounded. I used low fat rasberry vinegarette as the marinade,low fat mayo, and sour cream. I also didnt have celery so added green peppers and eggs instead. YUM! The only modification I might make next time is 3/4 c. mayo and an extra can of tuna.

Cabbage Rolls II

Slow Cooker Taco Soup

This is a great tasting low-fat soup, if you use lean beef. The only thing I think it needed was salt. The recipe didnt call for it (maybe that is just a gimmie) I added grated cheddar cheese to my bowl as another review suggested. Tasty and simple recipe.

This recipe was ok, but I didnt think it was fabulous. It tasted a bit like pizza with no sauce. I'm not sure what I was expecting but it was something a bit different than this. It was good, but I probably wont make it again.

Beef Pot Roast

This made a great cold weather meal. I added one package of onion soup mix and 1 c. water. Turn out great!! The best pot roast I've ever had. Will make again!

Cinnamon Bread I

Skillet Ham, Cabbage and Potatoes

I loved this recipe, it was simple and delicious. (especially if you love cabbage). I added alot more than a dash of salt,pepper, and paprika, that was the only change I made. Will make again.

Eggplant -- Easy, Good and Tasty

I love eggplant, but had no recipes that weren't heavy and full of fat. As others suggested I baked the eggplant before adding the rest of the ingredients. While the it was baking I marinated slices of tomatoes in fat-free italian dressing and place them on top of each piece of eggplant along with the cheese and some fresh basil, then baked another few minutes. I left out the oil completely. What a wonderfully flavored low fat side that will go with anything. I served it with grilled salmon and fresh spinach. Will definately make again!!

Tomato Enchilada Bake

YUMMY! And so simple too. I added green chiles as other suggested, and didnt have fresh tomoatoes so I left that out. I also subbed dried cilantro for the parsley. Will make again.

Baked Spinach

This was a nice alternative to regular steamed spinach. As many others suggested I whisked the eggs (used egg beaters), flour and milk together then added cheese (2 c), sauteed onions, and garlic. I steamed the spinach just a bit then added a half to the bottom of the dish. Used half the egg mixture on top the spinach, put the other half of the spinach and added the rest of the egg mixture. I topped with Italian bread crumbs and asiago cheese. I left out the margarine completly. It tasted great, but could use more garlic (I used 3 cloves) and more cheese. Will make again.

Groovie Smoothie

WOW! This made an awsome breakfast. I used soy milk, and a small can of drained peaches instead of the banana. I also putin 3 packages of Splenda. This will make a great summer snack or light meal!!

Low Fat Bran Muffins

Excellent low fat muffins, some of the best I've had! I made a few modifications based on other reviewers. I used egg substitute, and raisin bran (2 1/2 c), increased the flour to 1 1/2 cups, and increased brown sugar to 2/3 cups. I also used a bit less than 1/2 c. of applesauce, to make of the rest of the 1/2 c. used 3 tablespoons of veg. oil. (this added a bit of fat but not much) Will make again, they are a great breakfast or snack. Very moist and light.
