Pizza Sauce II

I tried this in a bind (ran out of store bought) My husband and I loved it! I cut the recipe in half since I was making a small pizza, added fresh basil and eliminated the tomato paste (I ran out of that too!) I will be using in place of store bought going forward. YUM!

This was excellent. My husband told me that it was better than the one we get at a local Indian resturant (dont know if I agree with that). Next time I think I'll add some onion. We'll be having this often!! Thanks for the great recipe Katherine.

Chocolate Pudding Fudge Cake

Curried Vegetables

I wish there was a half star option, b/c I would give this 3 1/2. Although it wasnt nearly the best curry I've had, it improved by leaps and bounds after sitting overnight in the fridge. If I make it next time I will cook it a day ahead of time. I added onions, garlic and at the very end coconut milk. I double all the spice and probably tripled the salt.

Eggplant Parmesan II

LOVED this recipe! I only used one eggplant, and had enough for four servings. Had two chicken breasts I needed to get rid of so I used the same method as eggplant and cooked them in a seperate pan. All of it turned out great! I made my own sauce (one from this site) and had to cook the eggplant about 45 min. before it was done. I would also recommend waiting , and putting the top layer of mozz. cheese on toward the end of baking. Thanks for a great dinner Dolores! I'll be adding this my favorites.

American Lasagna

Low-Fat Blueberry Bran Muffins

I made this into a loaf and it was great for a low fat recipe. I made a few modifications based on what I had in the pantry. First I used oat bran instead of wheat bran. I used 3/4 c. of brown sugar and added more than 1/2 c. of milk. I also only had 1/4c of applesauce so I used 2Tbl. of butter and a 1/4c. low fat sour cream. I also used all wheat flour and added an extra 1/2 tsp. of baking powder. This will make a tasty, healthy breakfast!! Will make again.

Baked Lamb Chops

This was a good, easy way to prepare lamb. Nothing special though. I used seasoned breadcrumbs and followed the recipe exactly. Will probably make again b/c it is so easy.

Creamed Spinach Casserole

This made a tasty side dish. I added 1/4 chopped onion, two garlic cloves, and, about 1/3 c. parm cheese. Mixed in seasoned bread crumbs Topped with more parm cheese. Yum!

Spicy Orange Beef

This was very good! I didnt use the orange zest b/c the orange marm. I bought already had zest in it. I also used orange juice instead of sherry as another review suggested, and doubled the amount of red pepper and marmalade. It was good, but I didnt think it was too orangy. I might just stick to ordering out :)

No Eggplant Moussaka

MMMM!! This recipe looked perfect for the ingredients I had on hand, and the fact that I lacked eggplant for regular Moussaka. I cut the recipe in half except for the sauce and the tomoato mixture. For the tomato mix I used one can of Italian stewed tomatoes and 1/2 can of tomato sauce. Since I only used two potatoes, the cooking time was cut down by about 45 min. Will make again. Award Winning Soft Chocolate Chip Cookies

If there were 4 1/2 stars that's what I would give this recipe. I dont like cookies, but these were rated a 5 by my Mom and a 4 by my husband. Very moist, thanks to the pudding. What a great recipe, I will replace my existing recipe with this one! The only change I made was using egg substitute and soy milk instead of vanilla ( I was out).

Crab Salad

This was a very easy lunch, and it tasted great. I made a couple of changes, I used 2 tsp of olive to saute with and omitted the butter. I also added some salt and a dash of garlic powder, and cut the amount of mayo in half. I served it with sliced avocado. Next time I might try subbing finely diced celery for the green pepper.

This salad is very authentic. The only change I made was omitting the green onions, I used regular white onions instead. The recipe is exactly like the one in my middle eastern cookbook, and all my arab friends loved it! Be sure and put the pita bread in right before serving.

Creamy Fruit Salad II

This was a great summer desert. I used low fat cream cheese and nonfat condensed milk. No fruit cocktail, just one can of pinapple with juice and LOTS of fresh fruit. Everyone enjoyed it! Will make again.

Thai Peanut Chicken

This was good after I made a few adjustments. I tripled the sauce as others suggested, but had to add a whole tsp of pepper and another tablespoon of peanut butter to get rid of the extreme saltiness from the soy sauce. It turned out good, but I was expecting something along the line of Pad Thai, and this sauce was ALOT heavier and not sweet. Cilantro on top before serving is a must. The recipe tasted good, but I probably wont make again, as my family didnt care for it.

Low Fat Bran Muffins

Excellent low fat muffins, some of the best I've had! I made a few modifications based on other reviewers. I used egg substitute, and raisin bran (2 1/2 c), increased the flour to 1 1/2 cups, and increased brown sugar to 2/3 cups. I also used a bit less than 1/2 c. of applesauce, to make of the rest of the 1/2 c. used 3 tablespoons of veg. oil. (this added a bit of fat but not much) Will make again, they are a great breakfast or snack. Very moist and light.
