Broiled Chicken Breasts with Herbs, Carrots, and Red Potatoes

Really Really Good. I followed the advice of some of these reviews & baked it instead. Also, I didn't have fresh herbs so I rolled the chicken in poultry seasoning & dry herbs - turned out heavenly. I also used 2 boneless skinless organic & free-range thighs in addition to 2 boneless & skinless breasts...I assure you, the thighs were by leaps & bounds more delicious.

Delicious Ham and Potato Soup

A crowd pleaser! I used bacon instead of ham & added about 2 cups of cooked, pureed yellow squash. Epic delicious. I highly recommend cooking this while listening to golden oldies & drinking wine...it makes all the chopping of potatoes & onions more tolerable.

Crustless Spinach Quiche

I just made this quiche this morning for my lovely lady, and let me tell you it was bangin! I added bacon because - even though we both need to fit into our wedding dresses in one wee little month - um, bacon is delicious. Instead of muenster, I literally used whatever cheese I had in my fridge. 1/2 cup of parmesan & 2 cups of "mexican mix" which had monterey jack, cheddar, asiago and some other deliciousness. Our slices were gobbled up in seconds. I highly recommend this dish - quick & easy!

Penne a la Vodka II

Scrumptious indeed. I made this for a few guests, one of them being a vegetarian. I used fresh cherry tomatoes instead of canned. It was consumed with much enthusiasm.
