Red Lentil Curry
Well, I'll say up front, I have no idea how authentic this is. As relatively new vegetarians, my family is always on the look out for satisfying food with ingredients I've heard of, that I can find in the supermarket. This recipe delivers. We used fresh tomato puree and added diced tomatoes at the end, as we had a very successful tomato garden this year. Also, I didn't have any curry paste, but probably would have left it out anyway so that our 3 year old could eat it. I added a bit more garlic to compensate. It was a hit at our house over brown rice.

Beth's Spicy Oatmeal Raisin Cookies
These cookies are great! I added a little ginger to it and substituted whole wheat flour for regular flower. The result was a great oatmeal cookie! I wish I had had walnuts handy to throw in with the raisins, that would have made them perfect! I recommend trying these!

Cream Cheese Cookies IV
These cookies are AMAZING! I made half a batch as thumbprint cookies. They tasted great, but looked a little ugly since the cookie spread out and the jelly didn't stay in one place. So that was my practice batch that my husband and I ate (12 cookies in 12 hours...they're that good). The next batch I put in sweetened, dried cranberries (like craisins) and dusted them with powdered sugar while they were still warm. Fabulous! My biggest tip if you're making these for gifts or company: Right after they come out of the oven LEAVE THE HOUSE. Then a few hours later, when you're sure they're cool, come back. Box them up or put them in the cookie tin and deliver them RIGHT AWAY. If you make them ahead a day or two there won't be any left for the person you made them for!
