Lemon Lover's Pound Cake

I really liked this cake but only gave it 4 stars because I think the bake time and temperature is way off. I started cooking this at 350 for the first 55 minutes and it was not done. It was kind of brown already but underdone in the middle so I reduced the temperature to 325 and cooked for another 20 minutes. Next time I will bake this at 325 instead....

Ooey-Gooey Cinnamon Buns

okay, seriously better then the cinnabon ones!!!! Takes a little time to prepare but oh so worth it!!!!! I tweaked this just a touch...I used 1 cup of butter and 1 cup of brown sugar for the bottom and omitted the nuts. This made a really creamy topping and did not dry out. I added 1 tsp of cinnamon in the last addition of the flour, which gave the dough an extra little kick. I made the dough the night before and baked in the morning...The smell in the kitchen was heavenly enough to awake 2 sleeping 13 year old boys at 8am on a Sunday morning!!!! Topped this with a cream cheese icing and OMG, they were AWESOME!!!!!Try this one, you won't be disappointed....

Scottish Shortbread II

I have tried soooooo many shortbread recipes and finally found a keeper here! This is not only simple but buttery and delicious!!! Melt in your mouth texture. Thanks!!!!

Easy Decadent Truffles

These were insanely delicious! I took these to my son's hockey tournament this afternoon as a THanksgiving treat for the parents. They all loved them and could not believe that they were homemade! I divided the recipe in thirds before adding the extract. I made one batch with mint extract, one batch with vanilla and one batch with bailieys. I also dipped each batch in melted chocolate. Some in white some in semi sweet and some in milk. Splurge and use good quality chocolate in the recipe it's worth it for the extra dollar or two it will cost. To dip the balls in melted chocolate I inserted a tootpick just slightly into each ball before dipping. This made for a smooth finish and if gentle, produced a perfect truffle! I also suggest adding a tsp. of shortening to the melted chocolate. It makes the chocolate "shine" after they cool. This recipe is fussy but well worth the end result!!!!!!

Tiramisu Layer Cake

I really took my time when deciding to prepare this one but boy am I glad I did..it was OUTSTANDING!!!!! Here are my modifications... 1. made it in 2 layers instead of 3 2. doubled the coffee and kahula everywhere 3. froze the cake for 2 hours before adding the liquid 4. made the cake and assembled it the day beofre I served it. 5. put the frosting and the filling in the fridge for an hour before frosting the cake..this helped the frosting "set" 6. Used the cream cheese, icing sugar and ssour cream indeat of mascarpone cheese the ony other thing I might do differently (I will make this one again!!) is to cut the filling in half as it was alot for only 2 layers. This was as beautiful to serve as delicious it was to eat!!!!

Classic Peanut Butter Cookies

followed a few reviewer's advise and added 1/2 cup extra peanut butter....I also usd salted butter so I did not add the extra in the recipe. I also used creamy peanut butter instead of chunky. Baked for 10 minutes for chewy cookies...delicious!!!! :o)

Peach Pie

Really liked this....modified based on some others suggestions....used 1/2 cup each broen and white sugar, added 1 heaping tbsp of cornstarch to the butter mixture. cooked at 450 for 10 min utes, then reduced heat to 350 and cooked for an additional 30 minutes. Turned off the oven after the cooking time was up and left the pir in there for about 90 minutes...Was PERFECT!!!! no soggy mess, just a beautiful, delicious pie!!!

Blueberry Lemon Bread

This was good but too sweet with 1 cup of sugar, which is why I rated it only 4 stars. By doubling the lemon zest, using 1/2 cup sugar, and by not melting the butter (soften instead), this is a 5* recipe for sure! I've also made the into cupcakes too and they turn out terrific and take 1/4 of the time!

Excellent and very easy to customize to your own tastes! I subbed a few items to ou families taste...omitted oil and used peanut butter instead. Used protein powder instead of wheat flour, doubled the cinnamon and doubled the whole recipe to fit a 9x13 pan. Wonderful!!!!

Roasted Lemon Herb Chicken

Great chicken recipe! Our bbq died this weekend and we were having company tonight for dinner..I needed something BBQ like to serve that I could cook in the oven..Glad I chose this! It was fantastic. The only changes I made were to double the seasoning and sprinkle a little on after I poured on the olive oil/lemon onto the chicken. I also put 1/2 a lemon inside the cavity of the chicken, along with a couple of cloves of garlic. This will now be my new go to chicken recipe!

Sunshine Ice Cream Pie

Ive made this a few times and really enjoyed it! I made it as stated and then made a few modification based......I used a chocolate crust, vanilla ice cream and rasberry sherbert. I softened the vanilla ice cream first and mixed it in a bowl to make it less "lumpy". I pread it over the grraham crust andfroze for about 30 minutes. Then I softened the sherbert and mixed it in a bowl too. Added it over top of the vanilla layer and added fresh rasberries and chocolate rosebuds. Froze overnight and served the next day. No need to soften before serving...serve right from the freezer!

Zesty Porcupine Meatballs

This was pretty good but my meatballs did not stick together....halfway through cooking I ended up crushing the remaining meatballs that did not stick together and made a hash....served this over rice and it did taste like the inside of a cabbage roll. I'll make again but probably won't make the regular rotation. Next time I'll add breadcrumbs to the meatballs.

Bake Sale Lemon Bars

The BEST lemon squares!!! My whole family loves them. Chewy texture with a great lemon flavour. I decreased the crust cooking time to 15 minutes and the lemon layer for 17-19 minutes to ensure that they didn't brown around the edges! Definely a keeper!!!!!

Black Forest Cake I

This cake was so soft and moist! The whip cream was not overly sweet and did not take away from the chocolate of the cake itself. I did have a problem with the cake not staying together but I'm sure it was my fault!!!! I will definately make this again!!!!

Lemon Cream Cheese Frosting

This was good but not enough lemon flavour for me. I swapped the vanilla extract for lemon and it was perfect! I also think that amount of icing sugar is off...I used 4 cups and might even reduce it to 3 1/2 next time.

Peach Cobbler Dump Cake I

This is ridicously easy! I cannot believe that I've never made this recipe until now. I baked this at the cottage this past weekend for the family and they couldn't believe how tasty it was! I used 1 1/2 cans of 28 oz sliced peaches in juice, drained 1 can fully. I also added 1/4 cup of brown sugar to the top and grated the butter over top that. Served with a good quality vanilla ice cream. This will now be my "go-to" dessert recipe!
