Bake Sale Lemon Bars

Reviewed: Dec. 9, 2002
The BEST lemon squares!!! My whole family loves them. Chewy texture with a great lemon flavour. I decreased the crust cooking time to 15 minutes and the lemon layer for 17-19 minutes to ensure that they didn't brown around the edges! Definely a keeper!!!!!

Caramel Shortbread Squares

Reviewed: Dec. 10, 2002
Did I do something wrong with these????? The caramel layer didn't stick to the shortbread layer. The taste was AMAZING but we had to eat it right out of the pan! They were a little hard to cut as well. UPDATE**** So it took me 8 years to try this recipe again and I'm glad I did. I read through the reviews and made the following changes... 1. baked these in a mini muffin pan. Cooked the shortbread for 8 minutes instead of 20. Crust came out beautifully! No crumbly crust and no fuss to cut them...they look FANTASTIC!! 2. Definately stir the caramel for 5 minutes over a LOW boil. This truly makes all the difference in the world! I also still stirred the caramel for 3 minutes after removing it fromt the heat. You need to work quickly to get the caramel in the mini muffin cups as it hardens quickly. 3. Refrigerate after each step...this helps in keeping them together. 4. I doubled the caramel layer to get 36 mini muffin size treats of these....

Cranberry Orange Loaf

Reviewed: Dec. 27, 2006
I made this recipe to give as gifts in a baking basket. Needed to bake this loaf 15 minutes longer then stated and was still worried that it might be lumpy in the middle. Next time, I'd use smaller loaf pans and bake 35 minutes.

Awesome Carrot Cake with Cream Cheese Frosting

Reviewed: Nov. 5, 2007
Have made this multiple times now and get rave reviews every time! I've made this into cupcakes as well and they turn out great (same temperature but bake for about 15 - 20 minutes)...I modified it my second time around by using 3/4 cup white sugar and 3/4 cup brown sugar and omitting the oil and replacing it with unsweetened applesauce...much healthier and a better cake!!!!!
