Tiramisu Layer Cake

Reviewed: Jan. 5, 2011
I really took my time when deciding to prepare this one but boy am I glad I did..it was OUTSTANDING!!!!! Here are my modifications... 1. made it in 2 layers instead of 3 2. doubled the coffee and kahula everywhere 3. froze the cake for 2 hours before adding the liquid 4. made the cake and assembled it the day beofre I served it. 5. put the frosting and the filling in the fridge for an hour before frosting the cake..this helped the frosting "set" 6. Used the cream cheese, icing sugar and ssour cream indeat of mascarpone cheese the ony other thing I might do differently (I will make this one again!!) is to cut the filling in half as it was alot for only 2 layers. This was as beautiful to serve as delicious it was to eat!!!!

Zesty Porcupine Meatballs

Reviewed: Jan. 5, 2011
This was pretty good but my meatballs did not stick together....halfway through cooking I ended up crushing the remaining meatballs that did not stick together and made a hash....served this over rice and it did taste like the inside of a cabbage roll. I'll make again but probably won't make the regular rotation. Next time I'll add breadcrumbs to the meatballs.

Creamy Au Gratin Potatoes

Reviewed: Nov. 10, 2010
Yep, these were good! I doubled the recipe to accomodate dinner for 10 people. The only changes I made were to dice the onions and mix them with the potatoes first. I also mixed the sauce with the potatoes before putting it int he baking dish. I also used Sharp cheddar cheese, which gave it fantastic flavour! Thanks for a great recipe!

Brooke's Best Bombshell Brownies

Reviewed: Oct. 10, 2010
Best brownie recipe, hands down. Made the original recipe a few times and last time I made them I decreased the sugar to 2 cups and didn't notice much of a difference.

PHILADELPHIA New York Cheesecake III

Reviewed: Apr. 18, 2010
Loved this! The only change I made was to double the crust (added 3 minutes when I baked the crust) and placed a pan of water to the oven while the cheesecake baked. No cracks, beautiful cheesecake! Taste was nice and creamy and cut beautifully...This is a really rich cheesecake, LOTS of calories but is great for a special occasion...I will certainly make this one again.....

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Apr. 6, 2010
Best stuffing EVER!!! I did not stuff a bird with it but baked in a casserole dish for 40 minutes at 375 instead. If you are going to bake it this way, make sure you use double the amount of broth...I also did not use the liver (icky!)

Almond Biscotti

Reviewed: Feb. 6, 2010
I was not sure of this recipe when I made the dough as it was REALLY wet and I actually wondered if I'd missed an ingredient. However, I plugged along and follwed the recipe to a "T" and I"m glad I did. While the dough did spread alot more then other biscotti recipes I've used, it did produce a great cookie! I baked it 10 minutes longer the first time and when I cut it into slices and baked the second time, I baked them 5 minutes longer on each side. I dipped them in chocolate on one side and sprinkled with sliced almonds and they turned out great!!!! I will certainly make this recipe again....

Coconut Macaroons III

Reviewed: Dec. 20, 2009
I'm not much of a cocnut fan but boy oh boy are these good!!!!! I made mine smaller and managed to get 4 dozen out of the batch. Cooked for 9 minutes...I also dipped the bottoms of the cookies in melted semi-sweet chocolate...I didn't have any problem with the cookies sticking as I used parchament paper and sprayed it with Pam.

They were AMAZING!!!!!! I look forward to making these many more times....mmmmmmm!!!!! UPDATE*** I have made these soooo many times now and I get 16 scones out of the recipe. I've added frozen blueberries and topped with a lemon glaze, added raisins to a batch, and did a plain batch with an orange glaze...all delicious!!!!!

Holiday Cranberry Chutney

Reviewed: Dec. 9, 2009
You HAVE to try this recipe this holiday (or anytime..lol!) I made this to serve as an appetizer at a Christmas party. I made it the night before and let me tell you, the smell of my kitchen while this was simmering was heavenly! I tried it after it had cooled and wow, was it delish! I served this over whipped cream cheese, I used 2 blocks. I poured the chutney over top and served it with crackers and a fresh baguette. Yummy!!!! I could not stop eating this...The only change I made was to use nutmeg instead of cloves. Thanks so much!!!!!

Ruth's Grandma's Pie Crust

Reviewed: Nov. 2, 2009
Yep, this one is great!!!! My previous pastry recipe is now retired after trying this one. I love that this makes either a double plus a single crust or 3 single crusts. Makes it MUCH easier for all the baking that I do. Make sure you chill your bowl (stainless works best) and pastry cutter bofore making the recipe. 15 minutes inthe freezer will do.
