Gooey Butter Cookies

This recipe is SO GOOD and SO easy. I made a few changes: (1) I used a cookie scoop instead of rolling the cookies in balls - they still turned our good; (2) I sprinkled the tops lightly with regular sugar as I did not have powdered sugar on hand (still turned out good; and (3) stirred in some extras on my last batch - white chocolate chips, cinnamon chips, and sliced almonds - YUM! I would like to try this with other cake flavors or maybe brownie mix. Thanks for a great recipe!

Chicken with Asparagus and Roasted Red Peppers

Delicious! Will definitely make again! I didn't have time to marinate for 30 minutes - they still turned out very flavorful. I had to substitute a few ingredients but it still turned out awesome and so pretty! Served it over leftover chinese white rice; the next day ate it over a salad at lunch time.

October Apple Pie

I have gotten so many compliments on this pie. Most people say that it is the best apple pie that they have ever tasted. Do not change a thing in this recipe - SO GOOD!!!

Very good. Definitely rich and creamy. The only caution that I would give is be careful with the old bay. I would not add the whole amount right off the bat because mine turned out a little too salty. Add Old Bay a little at a time to taste.

Pecan Zucchini Bread

This was DELICIOUS!!! I did not add the pecans because I did not have them on hand. I also added a package of vanilla instant pudding mix. This bread was so moist and delicious. I baked the recipe in 6 mini-loaf tins and it took about 45 minutes or so. I will definitely make this again!

Jalapeno Poppers I

These were definitely good. I read the reviews prior to making them and I took some of the advice. I made the cheese filling mixture the evening prior to making the peppers - it turned out delicious. I did add a little bit of garlic salt because some of the reviews said that the filling was too mild. I did blanch the cut/seeded peppers for about 2 min prior to working with them. I would suggest drying the peppers off or letting them air dry for awhile before stuffing and coating them because the batter did not stick as well to the wet peppers. I also found that it worked well coating the stuffed peppers in flour prior to coating them as well. I actually tried several coatings when I made these. If you want your poppers to look pretty, I suggest italian bread crumbs. Work in small batches because the bread crumbs tend to get goopy. They tasted very good too - one coat is just fine. I also tried a 1/2 and1/2 mixture of bread crumbs and tortilla chip crumbs. These were pretty good, too. My favorite was a 1/2 and 1/2 mixture of finely crushed tortilla chips and cool ranch doritos. Mmmm - these were oh-so-crispy and tasty. I used 18 peppers and I did have a little bit of filling left. Some of the cheese did melt out of the filling but it was not a big problem. I recommend filling the poppers a little over the edge - more filling tastes better. I hope this helps!
