Colleen's Slow Cooker Jambalaya

my husband and I tried this as our first time ever making jambalaya. the recipe was easy even though there were many components. It was really good and so simple to put together, no long wait to eat it either. I made 2 mistakes (which I will correct next time) i used the exact amount of cayenne (we love spicy foods and eat them often) yet the heat was really really hot almost to the point of ruining the whole pot. i solved this by adding a bit of rue (flour/water mixture), sugar and half a potato. My other boo boo was adding the entire amount of sausage. It was overpowering in the bowl but gave the broth a very rich flavor. I will use half the cayenne & half the sausage but I will make this again. Thanks to the recipe submitter, it was well worth it.

General Tao Chicken

This was absolutely, positively the MOST AUTHENTIC Chinese General Tso we have ever had. EVER. it is definitely a LOT of work and even though the recipes didn't say to prepare the sauce ahead of time, if we didnt it would have been a disaster. This is a two person job, honestly. I am very experienced in the kitchen and multitask like a mad woman ( i have 4 teens who always need to be in 4 different places at the same time, ha). This recipes really is worth the work. Please don't be too discouraged that it's a real task. I would never try it on a weeknight unless i had help. We did have to make a few simple alterations; the sauce calls for cornstarch- use half or you'll be thinning it out later. The batter is super thick 9that's why the texture and crust is so awesome, but it"s tricky to make sure every single piece of chicken is added separately or you'll have a clump of mean. I added additional scallions/green onions near the end. that really made us feel we were at our favorite Chinese restaurant. We ate with chip sticks to enhance Chinese Night. we often dedicate a night to a certain culture just to keep it fun to eat at home. We will do this again but I may need a glass of wine to calm my nerves first. It was fantastic with authentic Chinese Beer, Tsing Tso.

Classico® Spaghetti Carbonara

this was pretty tasty. I appreciated the ease of jarred sauce. It didn't take away from the taste or my feelings about it at all. I really did like this and my family LOVED it because we have only had this out lat $15.95 a plate. I did add a few things to make it a little heartier, peas (I used frozen) and small pieces of white meat chicken breasts. Also used double the panchetta but had to add some left over bacon grease to really bring it together. I used penne so the sauce would fill the tubes. That was great. This was quite easy and I will positively make it again. Thanks for the starter ideas.

Sloppy Joe Sandwiches

This was much too sweet for my tatste and a little bland. Sloppy Joe mix is usually hearty and bold. I ended up having to add 2 tablespoons additional Worcestershire sauce, 2 tablespoons light sodium soy sauce, 2 tablespoons of chili powder, a tablespoon of white vinegar, 1/2 cup of finely minced white onion and 1/2 cup of finely minced green bell pepper along with 1 tablespoon of course ground black pepper to salvage my night. This recipe is a decent BASE but I would not rely on the base for a meal. I will not use this again, but do understand some who like the sweetness may find it enjoyable. It was really just a little TOO simple in it's ingredients.

Romantic Chicken with Artichokes and Mushrooms

I absolutely LOVE this recipe. I was unsure how the artihcoke liquid would be but it combined so amazing well with the wine (I actually used dry sherry because that was what i had on hand)>. I did do a few very minor adjustments; I dusted the chicken breast lightly in flour (no liquid) and I added 3 tablespoons of butter (I doubled the sauce because it was SOOO good). Added penne and a garden salad. So good, so easy and so fast. No prep work at all. This is a real winner and I will keep this in my menu rotation. Thanks Caity-O

Beef Barley Vegetable Soup

overall this is a very good soup with a few alterations; I added additional beef bullion for a bit richer flavor and cut the frozen veggies in half. After it had been simmering for some time I removed the bay leaves. i really, really disliked the smell and didn't see much difference in the flavor. It came together quickly and it was very easy to adjust according to our preferences without sacrificing flavor.

Spicy Oil and Vinegar Bread Dip

Although this was quick and easy to put together it lacked real FLAVOR. I was waiting for the "spicy" to kick in. It didn't. If you're looking for that you must add red pepper flakes. Maybe it's just me as I prefer bold, full body foods. I doubled all of the dry ingredients and refridgerated over night then brought to room temperature, as suggested. It was pretty to look at :) It's nothing special, unfortunately but it served it's purpose as a basic bread accompaniment. Will not make again.

Chicken Marsala

Very tasty. Chicken needed more salt and a tad bit of garlic powder. I will make this again but will cook the mushrooms longer and double the sauce. For as easy as it is to make it is really a nice dish>

Double Tomato Bruschetta

my husband found this and was gung-ho on making it for a fairly large dinner party. I was really hesitant thinking of hot bruschetta as not too appetizing. Man was I glad i went along with him. It was so amazingly beautiful to present to our guests , so quick to make so we were enjoying our guests not slaving in the kitchen, and the taste? WOW, really really really good. Will totally be making again. Made us look like professionals. We made 3 loaves and every bite was devoured. Rave reviews and compliments galore, honestly. Very impressive recipe.

Split Pea Soup

Very, very good. I did feel it took quite a bit of time to do all the prep... and I wasn't sure exactly what a ham bone was after searching 3 local markets and leaving empty handed. I nice lady at the 4th store told me to use a ham hock and cook it with the water and seasonings for an hour while the peas soaked. Whew! Life saver! I would have had no idea. I don't typically like peas in anything, any shape or form but this was so yummy! Totally will be making again.
