Colleen's Slow Cooker Jambalaya

I liked it a lot. I didn't have any Cajun seasoning so I used chili powder and it worked fine. I live on my own so made the full recipe and froze individual portions to be thawed and eaten later. This is a winner.

Marinated Pork Tenderloin

Tried this recipe tonight for a BBQ. I didn't have sherry so used red wine. I also used brown Splenda instead of brown sugar (not quite as sweet) We marinated about 6 hours and then grilled on the BBQ. My guests really loved it and asked for the recipe. We also did the trick with the marinade to make the gravy, as suggested by some other reviews, and that was really good. It's a winner I'll use this one again.

Kung Pao Chicken

Tried this recipe one night when we had thawed chicken breasts and wanted to be a little more creative than just grilling them. Didn't have sesame oil so we used olive oil. Didn't have green onions so we used regular onions and we skipped the peanuts. Overall it was a good recipe and we enjoyed it served over a bed of rice. It seemed a bit bland and perhaps next time we'll look at spicing it up a bit. It's certainly a keeper though and we'll try it again.

Slow Cooker Chili II

Great recipe. Made it for a church dinner and it was a big hit. Thought it sounded like too much kidney beans so I added one can of kidney and one can of black beans and I skipped the cannellini beans. Used Tomato sauce instead of puree and it was fine.I'll use it again.

Turkey Mushroom Tetrazzini

Tried this with my turkey leftovers from Easter tonight. It was a hit with my Girlfriend and I. I made some substitutions; regular onion instead of green onion, skim milk instead of cream....butter and cream seemed a little calorie rich....used Herb and Garlic light Philly cream cheese instead of whatever that other stuff is (never heard of it) and put whatever turkey I had left over which was way more than 2 cups. It was very yummy but probably could have used a bit more seasoning...more garlic maybe...Definitely a hit though and I will do it again.

Leftover Casserole

Excellent way to eat up left over turkey. As others have said you really should cook the macaroni first which is what I did. I added more turkey than the 2 cups called for and more mixed veg (used frozen as that's what I had) but it just made for a richer mix. I added an extra cup of shredded cheese as I love cheese. I added a topping of crushed Breton whole wheat crackers and I gotta say that was a really good addition. My Girlfriend and I ate our fill and I probably have enough left over for 3 or 4 more meals throughout the week...just heat and serve. We loved this recipe.

Taco Pie

Made this recipe together with my GF. It's always fun to cook together. We took the advice of others and only cooked the roll dough for 3/4 of the time suggested because it was going back in the oven. We added onions to the ground beef mix and layered a bit differently. We saved some cheese and sprinkled the remainder over the top of the taco chips and cooked for 10 minutes. We added a medium salsa to the top of the portions when served and enjoyed! GF said "it's like having tacos without having the mess" ie' no mess on your fingers etc. The Crescent roll base was a pleasant addition to the taco experience and like having a soft taco. Spreading cheese on top of the mix softened up the taco chips. This would be a good addition to your potluck recipes. We enjoyed this recipe with our tweaks.

Seven Layer Taco Dip

I liked it but it didn't like me. The Taco mix with the beans gave both me and my girlfriend heartburn. I think there was too much dairy too...I'd skip the cream cheese If I did it again and maybe very the layers to put the tomatoes and salsa on different layers. I don't think I'll do this one again
