Beef Pot Pie III

I used a blade roast and while it was simmering I added 2 bay leaves. I didn't use the beef broth or frozen peas because I didn't have either on hand so I used onion, celery and carrots. With a little salt and pepper I found it was quite tasty. My hubby ate as a stew for two days and loved it then I made pie crust and made meat pies for him to have when I work afternoons.

Downeast Maine Pumpkin Bread

Have made several times but had to make a few changes after the first try. One cup of oil is too much....used 1/2 cup oil and 1/2 cup unsweetened applesauce. Didn't have allspice so added extra tsp of cinnamon and also cut the sugar back to 2 cups so it's not as sweet. This makes 2 large loaves or 3 smaller loaves and next time I'm going to add raisins just for fun.

Whole Wheat Blueberry Muffins

Pretty much followed the recipe except added only 1/2 cup sugar and baked in a mini loaf pan. There are 8 mini loaves and I baked at 350 for 25 mins. These are so good and just the right amount of sweetness for me. Will definitely make again!

Mama's Asian Chicken and Rice

Been wanting to try this for a long time because the picture makes it look so good! I am so very disappointed that it does not taste as good as it looks. I followed the recipe except did not add orange zest or pepper flakes (had neither). Even adding those 2 ingredients would not have made it any better. Will not be making again. I'll stick with my own Asian Chicken recipe.

Ham and Cheese Quiche

I used 1% milk instead of half-and-half and it was great. I also used frozen spinach instead of fresh because that's what I had. I think fresh would be better. Also used diced ham instead of canned. It set beautifully and was very delicious. I made 2 quiche and frozen one for later. This is a keeper!

Kay's Spaghetti and Lasagna Sauce

I added 1 green and 1 red pepper because that's what I had on hand and 2 small cans of tomato paste to thicken the sauce. I also added 2 tsp of parsley and skipped the salt & pepper. The sugar is needed to counter the acid of the tomatoes. I think the longer you simmer the sauce the better it tastes. So good the next day! Definitely a keeper!

Egg Foo Yung II

The only meat I used was pork and I ground it up in the food processor. I thought the combination of flavors was quite tasty...just as good as my favorite Chinese restaurant. The sauce was ok...not sure what was missing.

Baked Pork Chops I

used garlic powder, onion powder, pepper & just a bit of salt. Also forgot to use flour, just dipped in egg then plain bread crumbs & fried in olive oil. Did not have white wine. Added 1 package of low sodium chicken bouillon dissolved in 1/2 cup hot water and mixed with 1 can of mush soup. Baked covered in foil for 30 mins added soup mixture, covered again and baked for another 30 minutes. I used 1 inch bone in chops and they were very tender and juicy. Hubby loved them!

Chicken Quesadillas

These were VERY good! I started off making fajitas but changed my mind. Had everything but the fajita mix (made my own without salt) and bacon bits (can't have anyways.) I froze the leftovers to take to work. I served with no fat sour cream and salsa. YUM!

Pasta Primavera with Italian Turkey Sausage

Couldn't find turkey sausage so used chicken breast instead. This dish was ok, not very flavorful. No one else liked it and I ended up eating it for lunch 3 days in a row. Won't make again.

Orange Chicken

Pretty much followed the recipe except I used fine bread crumbs (all I had) and sprayed the dish with Pam instead of using butter (to cut down on calories). I should have known that baking at 375 for 45 mins would produce dry chicken and it did. Should have baked at 350 for 30 mins instead. Only a faint orange taste, not impressed at all. Even the family didn't care for it so won't be making again.

Creamy Au Gratin Potatoes

I found that 1 1/2 hrs was not long enough because my thinly sliced potatoes weren't cooked and had to cook longer. Also, I think more cheese is needed because it wasn't "cheesy" enough. This recipe is very similar to my mac & cheese dish which we all enjoy. Maybe the onion overpowers the cheese? I will probably try again and add more cheese.

Caramel Apple Pork Chops

I found the chops to be very flavorful, but the rest was lacking. This recipe needs some changes for sure. One reviewer suggested using applesauce...may try that next.

Lentil Soup

VERY DELISH! I used a 28oz can of crushed tomatoes and cut back on the water and I didn't have any spinach. I blended the soup to make it more cream-like and froze some for lunches. Very easy, healthy and delicious! Even my picky husband likes it so that says a lot right there!

Carrot, Potato, and Cabbage Soup

I did not have potatoes but made anyways. I did not miss them. I did increase the cabbage to 1/2 head. I also did not blend 100% but kept some chunks of carrot. GREAT soup!!
