Orange Chicken

Pretty much followed the recipe except I used fine bread crumbs (all I had) and sprayed the dish with Pam instead of using butter (to cut down on calories). I should have known that baking at 375 for 45 mins would produce dry chicken and it did. Should have baked at 350 for 30 mins instead. Only a faint orange taste, not impressed at all. Even the family didn't care for it so won't be making again.

Creamy Au Gratin Potatoes

I found that 1 1/2 hrs was not long enough because my thinly sliced potatoes weren't cooked and had to cook longer. Also, I think more cheese is needed because it wasn't "cheesy" enough. This recipe is very similar to my mac & cheese dish which we all enjoy. Maybe the onion overpowers the cheese? I will probably try again and add more cheese.

Caramel Apple Pork Chops

I found the chops to be very flavorful, but the rest was lacking. This recipe needs some changes for sure. One reviewer suggested using applesauce...may try that next.

Lentil Soup

VERY DELISH! I used a 28oz can of crushed tomatoes and cut back on the water and I didn't have any spinach. I blended the soup to make it more cream-like and froze some for lunches. Very easy, healthy and delicious! Even my picky husband likes it so that says a lot right there!

Carrot, Potato, and Cabbage Soup

I did not have potatoes but made anyways. I did not miss them. I did increase the cabbage to 1/2 head. I also did not blend 100% but kept some chunks of carrot. GREAT soup!!

Quick and Easy Chicken

The only good thing about this recipe is that the chicken was moist but it was too greasy. I doubled the sauce as some reviewers suggested but the leftover "sauce" was swimming in oil. I did not enjoy the taste of the sauce either so I will not be making again.

Blueberry and Raspberry Pancake Topping

I used fresh instead of frozen as they are both in season. I love this topping! It's not sweet like syrup and the flavor is fabulous! Doubled the recipe (I had lots of very ripe raspberries) and froze some. Delish on pancakes!

Japanese-Style Sesame Green Beans

Marinated Spicy Pork Chops

I found the pork chops extremely salty and not spicy at all. If I were to try this recipe again, I would have to use a sodium reduced soy sauce to make it more edible and add more and different spices. Really it's more like a teriyaki.

Fluffy Pancakes

These pancakes were very fluffy as the name states! Delicious!! I tripled the recipe and there were a few left over for the next day. I also cut back on the sugar. Syrup is already sweet, don't need to go overboard.

Alfredo Sauce

I tripled the recipe hoping I would have enough sauce for a large casserole with 1 1/2 lbs of rotini. Thankfully it was. I used half n half, 2 1/2 tsp of chopped garlic and 1/8 cup of dried parsley. I had to thicken as it was too thin. Tasted very rich & delicious. I may try a lower fat milk next time.

High Temperature Eye-of-Round Roast

I had a 4lb roast and extended the cook time to 10mins per lb instead of 7 because I prefer my roast cooked more than rare. I even cooked an additional 10 mins before I turned off the heat. I knew my oven will stay hot so the roast would continue to cook. After time was up I cut into the middle and it was still to too rare so I baked at 350F for an additional 30mins then let it sit covered for 30mins. When I sliced it, it was still pink but more medium well and the juice was pink not clear. It was NOT tender at all, but very tough. I fault myself for purchasing the cheap cut and expecting it to be tender. I just couldn't justify spending $65 on a prime rib when the eye of round was $15. I think I will go back to my regular way of cooking a roast and save the cheap cuts for stewing.

Ranger Cookies III

I needed a recipe to use up some coconut, walnuts and raisins and found this one. This is a GREAT cookie! I hate to make changes to a recipe before rating, but I had no choice. I used 1 cup shortening & 1/2 cup margarine and cut back on the white sugar by 1/2 cup. Also at the last minute I added 1 cup choc chips (wanted to use them up before the kids eat them!). I baked for 11 1/2 minutes and had a crisp light brown very tasty cookie. VERY delish! Also made 6 dozen. Must be BIG cookies to get 36! Will definitely make again! This is a keeper for sure.

Marinated Baked Pork Chops

I added all the ingredients listed but added a little too much lemon juice by mistake but it was still tasty, just a little tangy. I marinaded as others suggested but only for 1 hour, didn't have more time. After the first 30 mins of cooking my pan was full of juice which diluted the sauce. What a waste! The second 30 mins I cooked on a rack with the remaining sauce. Should have cooked maybe only 15 mins more as the chops were a little dry. My husband gave them 8 out of 10 so I gave them 4 stars, which is probably a very generous rating. Will probably make again.

Candied Sweet Potatoes

I am not a fan of sweet potatoes. I made them for a special birthday dinner for my sister-in-law because it's one of her favourites and SHE loved them. So I guess I did them right! Thanks for sharing!

White Cheese Chicken Lasagna

This was very delicious and very rich. Everyone LOVED it! I used cottage cheese instead of ricotta, only 1 pkg of spinach as recommended by others, doubled the chicken and added mozz cheese on top. I used no cook noodles for the first time because I made 2 different lasagnas and wanted to save time. They were ok, but next time, I'll precook. Other than these changes, I followed the recipe and the sauce was very creamy and yummy! Thanks Lisa! This is a keeper!
