Almost No Fat Banana Bread
I would've given it a full 5 stars, but I did make some minor adjustments. I used whole-wheat flour, 1/2 cup sugar, 1/2 cup applesauce, added a teaspoon vanilla and threw in some chocolate chips. This is a great basic recipe that is easily tailored to suit your individual tastes. Not over-mixing the batter with these kinds of breads is important. So I mix the wet ingredients and sugar together, and mix the dry ingredients together in a separate bowl. Then I combine the two and mix until just moistened. I then fold in the bananas and chocolate chips. The consistency was great.

Biscotti
I've made this 4-5 times now. I like it because its easy, but it do sometimes have problems with the loaf crumbling a bit when I cut it. I have tried letting it cool more and letting it cool less before cutting. But all in all, I really like it. Made it today and subbed 1/4 cup flour for 1/4 cup cocoa powder and made chocolate biscotti. Turned out great.

Pancakes I
Awesome simple pancake recipe! I will NEVER buy pancake mix in a box ever again! Two tricks though- don't over mix, and let the batter sit in the fridge for a few minutes before using. Seems to be fluffier if you do that. Also, I mix in mashed bananas or berries and they taste great! Also, a little cinnamon enhances the flavor.
