Dominican Style Oatmeal

Only use minimal nutmeg. Too much is very overpowering. Also cut the sugar in half, unless you like it very sweet.

Dill Veggie Tuna Salad

When I first put this dish together, I wasn't that impressed. Then I put it into the fridge, and it was 1000x better! Seriously, eat this cold. Also, add salt, 2 cans of tuna, 1 tablespoon of dill (if dried), and eliminate the cucumber if desired. I also used about 1 and a half cups of pasta twists. I thought this was a good amount of pasta.

Chickpea Curry

Sooo good. Recommendations: You can omit the coriander (its basically cilantro, assuming you DO have cilantro). I also recommend adding a can of diced tomatoes (with juice) rather than the garbanzo bean can water. Also, eat over rice (even a little is worth it). Instead of using cayenne pepper, a few dashes of hot sauce works really well without making it too spicy. Also lime juice adds a nice kick. I'll be making this many more times!

Best Brownies

Although the recipe was delicious, the brownies didn't rise well at all. I basically ended up with relatively flat brownies, which was kind of disappointing.

Mexican-Style Goulash

I substituted tomato sauce for tomato paste (1 can). Also, be sure to add extra water to the pan if you plan on cooking the pasta within the meat/tomato sauce. Some tasty additions are a few dashes of hot sauce, worcestershire sauce, and minced garlic. Excellent dish!

Meatball Nirvana

The Worcestershire sauce and red paper flakes are the key to these meatballs. Don't hold back on either ingredient. If you don't have bread crumbs, you can toast regular bread and chop it up into small pieces. I love eating these with the Cowboy Mashed Potatoes found on this site. Easy and delicious.

Boilermaker Tailgate Chili

Best chili I've ever had. Feel free to double the beer (the taste is wonderful). I also added red pepper flakes for a kick. After browning the meat, you can put everything in a slow cooker to make things easy. Oh, and I also replaced the bouillon cube with a can of beef broth.

Old Settlers' Baked Beans

It's a delicious sweet chili, basically. I loved it, as did others. Recommendations: only use 2 cans of beans...that's plenty. I prefer pork and beans/kidney beans. Also, omit the white sugar completely. No need to add any more sugar than the brown sugar recommended. Cook the bacon beforehand in a broiler, flipping once to get both sides crispy. Finally, place in oven or slow cooker. I used the slow cooker for about 4 hours and it was perfect!

Cowboy Mashed Potatoes

No milk necessary! Excellent recipe as written. Make sure to chop up carrots, potatoes, and peppers before boiling. Also, canned corn works very well instead of frozen.

Black Bean and Couscous Salad

Extremely tasty! Reminded me of Chipotle filling. Adding a little bit more cumin, lime juice, and vinegar definitely brings out the flavors. Also, minimal jalapeno is necessary, unless you want it to be extra spicy. Maybe a half of a pepper. Note to first-time Couscous makers: once all the chicken broth is absorbed by the grains, stir it all up and remove from heat. It can burn if you just let it sit on the stove for too long. Excellent recipe! Will definitely make again.

Excellent recipe. I recommend adding 1 tablespoon of oatmeal for texture, and a teaspoon or so of Worcestershire and vinegar. This makes it perfect!

Best Tuna Melt (New Jersey Diner Style)

Extremely tasty. Make sure that you toast both sides of the bread before adding the tuna, tomato, and cheese. Also, feel free to use any other cheese/bread. It will be delicious! Vinegar is a nice addition that I wasn't used to.
