Creamiest Rice Pudding

This is the best rice pudding I've ever had! It wasn't really that time consuming. You just put it together and come back an hour later and finish it. Simple. I add cardamom and nutmeg to mine.

Uncle Mac's Peanut Butter and Jelly Cookies

Tasty, but had to remove a star as it was wayyyyyyyy too sweet. Cut sugar in half for sure! I'll probably try these again with that adjustment. I used Morello Cherry Fruit Spread and it was delightful.

Garbanzo Bean Chocolate Cake (Gluten Free!)

Off the charts! Never could tell there were garbonzo beans in it! It was dense and fudgey and delicious with a scoop of coconut gelato and some fresh strawberries. Will definitely make again!

Acorn Squash

The all time best way to have acorn squash. If I'm craving something different and exotic, I'll put butter and apricot preserves in the center. If I just want comfort food, I'll use this recipe, every time. YUM.

Coconut Curry Tofu

This was outstanding! I did everything to the letter, then added a bit more soy, ginger, garlic, and coconut milk. I also subbed half the water in my rice for coconut milk to make coconut rice to go with it. It was a nice addition that made the meal very very good. Next time I'll try it with chicken.

Hawaiian Chicken Kabobs

The marinade was great! The chicken turned out unbelievably tender. I let it marinade from one night to the next. I added bell peppers to the kabobs.

Antipasto Salad

I have made this recipe on countless occasions, and am always praised for it, and asked for the recipe. I always cut up string cheese into cubes instead of using shredded mozzarella. I wouldn't do it any other way. I also add a can of garbonzo beans (chickpeas) and sometimes black olives if I have them. I will make this often.

Very good! We had it one night with tortillas, eaten like a soup, and the next night served over rice, eaten with tortilla chips and sour cream. Both ways were delicious.

Maple Salmon

This was okay, but not something I'd make again. I prefer the lemon/dill/herbs approach of preparing salmon. This made it a little too sweet and it came out dry.

Creamy Butternut Squash With Cinnamon Soup

I tried to like this, but I really hated the texture of the puree. I thought it had a really odd flavor, and ended up throwing most of the pot away. Maybe it's just personal preference, but I didn't care for it.

Artichokes

I hate giving bad reviews, but this was awful to me. I could only eat a small bit before throwing the rest away. Maybe I didn't steam the artichokes for long enough, but the flavor was just gross to me.

Baked Acorn Squash with Apricot Preserves

I have only ever had acorn squash with brown sugar and butter, and so had my husband. We were both pleasantly surprised by this! A very delicious, not overly sweet flavor at all. My new favorite way to serve acorn squash!
