Cheesy Ham and Hash Brown Casserole
I don't generally like it when people review, and say that they didn't follow the recipe, but here I am... doing exactly that. I'm single, so I didn't need a huge breakfast casserole, so I modified. I didn't have sour cream, and wanted to increase the protein, so I swapped it out for about half a carton of egg beaters. I also used cream of celery instead of cream of potato. AND I baked it in a mini-muffin tin instead of a casserole, so it'll be easy for weekday mornings. I forgot about the Parmesan cheese, but used about 2-3 cups of a cheddar/jack blend.

Cranberry and Cilantro Quinoa Salad
I have made this recipe many times and LOVE it. My vegan friends love it, too! My only tweaks were to add the curry to the water when cooking the quinoa (I dislike "raw" curry powder) and omit the cilantro (I'm not a fan). I always get asked for the recipe!

Penne with Spicy Vodka Tomato Cream Sauce
This is an excellent "starter" recipe. You can substitute cubed chicken breast for the Italian sausage, if you'd like to go lighter. I start the water to boil at the same time I start the recipe, and everything finishes together! Oh -- and I like texture in my sauce, so I use one can of crushed tomatoes and one can of the petite diced tomatoes (the two cans adding up to about 28 oz). I also use about 1/4 cup vodka. YUMMY!
