French Butter Cakes (Madeleines)

This was simple and the results are lovely. Next time I'll use the whisk attachment for my mixer though. That will probably make them even lighter. I'll be making these a regular thing at my house now that I have the pans and the recipe. Can't wait to try the chocolate ones!

Chakchouka (Shakshouka)

My husband came home from Israel raving about this dish. Used this recipe and it was fantastic. I double, triple or even quadruple the sauce, then freeze it in batches so we can have it regularly without having to chop onion first thing in the morning. I sometimes substitute shallots for the onion because I prefer shallots, but it is delicious either way!

Slow Cooker Pork Cacciatore

This turned out so well! My pork chops fell apart when I took them out of the slow cooker, so I pulled them apart with 2 forks like pulled pork and it was great over pasta. My only complaint is that the sauce was very watery. Shredding the pork helped. Next time I would add a little tomato paste to thicken the sauce. Overall, the flavour (and SMELL!) was fantastic and I will make this again.

No Fail Pie Crust I

Christmas Breakfast Sausage Casserole

This was super easy to assemble and was a delicious breakfast this morning. I put it in the oven just as we started to open presents, and it was ready right around the time we were starting to get hungry. I used Andouille sausage because we like things spicy, but I think any kind of sausage meat would work. Next time I might add some thin strips of sun-dried tomato, or some green and red peppers, but this is definitely going to be a Christmas tradition around here!
