Chef John's Perfect Prime Rib

I was really skeptical - I'm a thermometer checker with my meats and keeping the oven off for two hours with the door closed about killed me! I had a 7 pound prime rib roast and with the exception of the seasoning (I make my own), I followed the recipe exactly as written - roasting at 500 degrees for 35 minutes and then oven off for 2 hours. Turned out perfect. My husband was beyond impressed. I also made Chef John's Beef Au Jus. A meal my entire family loved. Thank you!

Frosted Pecan Bites

These didn't turn out well at all for me. I cooked them for the time specified and they ended up crispy and burnt tasting (although they smelled great while they were baking!).

Chow Mein Noodle Casserole

I've made this recipe 4-5 times now and my young daughters all enjoy it! I also used 2 cups rice and omit the almonds. I did try with cream of mushroom soup once when I didn't have cream of chicken on-hand -- the cream of chicken soup definitely tastes better.

Peanut Blossoms

Turned out great - wonderful flavor! I followed JBAILEY's advice and cooked them for 7 1/2 minutes -- added the kiss and cooked a 1 1/2 minutes longer! I also added a bit more peanut butter. Perfection! As far as others commented about breakage - make the cookies small. I ended up with 49 cookies and none broke.

Velveeta® Cheesy Beef Stroganoff

Not bad - my young daughters didn't rave "yum" when I served it, but they ate it. I also cut down on the amount of cheese and threw in some chopped onion when browning the hamburger.

Caramel Popcorn

I made this 4 days ago and am now making it a second time - at 7:00 PM due to the persistent begging of my family! This is wonderful caramel popcorn--as good as you'd buy at a specialty stand/store! I did use 1/2 margarine and 1/2 butter and only baked for 40-45 minutes. It turned out perfect. Gotta go stir my caramel corn! Happy eating!

Cowboy Cookies III

Wonderful recipe -- I did as others recommended and used 3/4 cups brown and white sugar. I made the cookies a bit larger, too. They were superb and passed the ultimate test...my husbands and three daughters gobbled them up!

Pumpkin Chip Muffins

I made these muffins as a "munchie" for the kids at our Thanksgiving get-together. Instead of making the regular sized muffins, I made mini muffins, using mini chocolate chips. I decreased the oven temperature to 375 and baked them for 10-14 minutes. They turned out GREAT! I ended up having about 80-90 mini-muffins. I took 50 to our Thanksgiving celebration and froze the rest. I should have taken them all -- they were gone within an hour!! I've already forwarded this recipe to 4 people! A huge hit! Thank you, Laurie!!!!!
