Shrimp and Crab Enchiladas

This was fantastic, and so easy to make. The hardest part was finding the green chili sauce. But it was well worth the hunt! I added sauteed onion, garlic, chopped green and red peppers to the shrimp and crab mix. I can't wait to make it again.

White Chili

This has got to be the easiest, yet most impressive recipe I have made! I used a local stores homemade corn and black bean salsa, and chicken broth instead of water. I also added another can of beans (mashed) to thicken the chili a bit, and added a little ground cumin and roasted garlic to the ground turkey. I didn't have any trouble finding the jalapeño pepper cheddar cheese, or have any problems with it melting. I served it with a griddle corn cake! Fantastic 30 minute meal!

Southwestern Pasta Salad

What a wonderful summertime light and flavorful pasta salad! I thought this recipe was perfect...my only changes were that I only used 1 tablespoon of chili powder and I added some cubed Monterey Jack pepper cheese and mini penne pasta. Thanks for the recipe, it was fabulous!!!

Fabulous salad, it was a delicious and filling main course meal! I added some chopped purple onion to the salad, and I substituted extra virgin olive oil for the vegetable oil.

Snickerdoodles I

My son wanted a soft snickerdoodle cookie, and this cookie recipe turned out perfectly! I added 2 tsp. of vanilla and only baked them for 8 minutes.

Cheddar Biscuits with OLD BAY® Seasoning

How does something so simple taste so heavenly?!? This recipe is perfection, I do not change a thing! I loved the hint of Old Bay, in our house Old Bay makes everything better!

Brazilian Cheese Bread (Pao de Queijo)

Oh my goodness, these little cheese balls were out of this world! A friend was making Brazilian Fish Stew and I made these as a side dish. I followed the recipe exactly except I used garlic salt , so glad I found this recipe!

Roast Adobo Pork Loin

Wow, this marinade is awesome...I almost never follow a recipe to the T, but this one I did! I am a savory, spicy girl, so I was hesitant to add the brown sugar and cinnamon, but I am so glad I did...it was amazing...what a wonderful flavor combination!

Perfect Apple Pie

This pie turned out perfect! I had about a dozen small green apples off our trees, the only thing I changed was I used apple pie spice instead of cinnamon and nutmeg. Topped with a scoop of French Vanilla ice cream...perfect summer time dessert!
