I have loved participating in the Allrecipes Allstars sponsor program this month with Avocado's From Mexico!!!  I have always been intimidated by avocados, worried how to pit them, worried that they would brown too soon, how to pick the right one, is it ripe enough?  Well I am not intimidated any longer, thanks for the helpful tips from Avocado’s From Mexico!!!  I loved the HOW-TO GUIDE they sent us, and also discovered that you can put the pit in fresh made guacamole to keep it from browning…who knew?!?  LOL…I always bought pre-made guacamole before…well never again!!!

I made the assigned recipe to me, avocado Mac & Cheese…I know, and how lucky was I to get that recipe, right?!?!  And let me just say it was truly outstanding, the avocado make it so creamy and rich…I didn’t change a thing!  This recipe is a must try:  http://allrecipes.com/recipe/avocado-mac-and-cheese/detail.aspx<


For my own recipe creation, they wanted a salad, guacamole, or sandwich…well since I never tried making guacamole from scratch before, Miss “store bought” girl, I thought why not?!?  Then I thought WOW wouldn’t guacamole be perfect on a BLT, a combination of my husband’s favorite food bacon, and my new favorite avocado!   Here is my creation, I hope it gets published! 

Ingredients (1 ingredient per line):
2 medium ripe avocados (pitted, peeled, and diced), save the pit

1 tablespoon fresh cilantro (finely chopped)

2 teaspoons fresh squeezed lime juice

2 tablespoons roasted red peppers (diced)

1/4 cup sweet Vidalia onion (finely chopped)

2 cloves of garlic (minced)

1/2 teaspoon salt

Dash of white pepper

Directions (numbered):
1. In a medium bowl, mash together the avocados, lime juice, and salt. Stir in the roasted red peppers, onion, cilantro, garlic, and white pepper. Refrigerate for 1 hour for best flavor with the avocado pit, this will help it from browning.

The avocado pit in the guacamole, to keep it from browning, has been proven to be false so don't count on it. I love avocados and am happy you discovered how easy they are to work with.

I would pay for that sandwich! Looks great. I got hooked on avocados when I lived in California and people brought them to work by the bagful from the trees in their yard. Was so surprised to find that you actually have to BUY them elsewhere!

Avocados from Mexico are great additions to almost any sandwich. Agree with Marie C., about browning. If you have no reservations about the product, spraying PAM on the surface of guacamole slows browning. Just like with apples and bananas, it is air contact that causes browning. I have also pressed plastic wrap into the surface of guac with good results.

I absolutely LOVE avocados! This has been a great month for us! A delicious powerhouse of nutrition that comes in it's own natural packing! Who could ask for more?

About Me
I have grown up with an appreciation for food, my Dad was a head chef and owned his own restaurant. I can remember at the age of 8, eating frogs legs and him telling me it was chicken...and I didn't know the difference! He always had me and my sister at least try what he was making, even if he knew we wouldn't like it. Well his love for cooking has definitely rubbed off on me. I find I am the happiest when I am in my kitchen cooking something wonderful for my family and friends. Everyone thinks cooking is so hard, but really it is one of those things that the more you do it, the better you get at it. There is nothing more satisfying for me then to hear, "Oh my gosh, that was so good...how did you make that"! I only hope I can have the same influence now on my son that my father had on me.
My favorite things to cook
I love to cook spicy foods, especially Cajun or Creole, my signature dish is Cajun Jambalaya. I make a pretty tasty Mexican lasagna as well. I am just learning how to make my own bread. I find there is something really special about making fresh homemade bread from your own hands, getting the yeast to rise, kneading it, and watching it rise!
My favorite family cooking traditions
My favorite time of year to cook is the holidays, everyone is so festive! My parents have a Christmas Eve drop in every year, and I spend the entire day cooking with my Dad helping him prepare! I also love baking Christmas cookies, spending the entire weekend baking and listening to Christmas music...this past year it even snowed! As for starting my own cooking tradition, well that has been baking family birthday cakes from scratch. I never really thought of myself as a baker, but after making a few birthday cakes it has now become expected in my family….and I love it, it’s much more personal! I’d actually get my feelings hurt now if they wanted a store bought cake!
My cooking triumphs
Well I have to say my biggest cooking triumph has been a Tiramisu Cheesecake, it was the first cheesecake I ever made...and let me just say, it was THE BEST I have ever had...I even impressed my Dad!
My cooking tragedies
Hands down...homemade pasta! I tried to make a fresh spinach pasta for a seafood dish, and it turned out to be a gross, green, sticky, pile of dough! I wont even attempt to make my own pasta again!
