Black Bean and Salsa Soup

This made a good base, but I had my son (who is a HS culinary student) play with it and add some spices (salt, pepper, paprika, crushed red pepper, chili powder & onion powder) to make it more flavorful. He suggested adding 1/2 an onion the next time. I will definitely make it again with his suggestions.

Best Spanish Rice

Cajun Chicken Pasta

This was super yummy. The only change I made was to switch the amounts on the bell peppers. I really love red bell pepper and don't really care for green, so switching was the way to go for us. I will definitely make this again.

Mini Pumpkin Butterscotch Muffins

Even my husband like these and he's not a fan of butterscotch. They were a little sweet to serve as a breakfast food, but were perfect for an afternoon snack.

Buttery Garlic Green Beans

These green beans were definitely tasty! I used jarred garlic instead of fresh and simmered the green beans 10 minutes instead of 5, as we like ours less crispy.

Baked Spaghetti with Chicken

I left out the broccoli and used 1/2 green and 1/2 red bell pepper. I also used mozzarella cheese instead of what was listed in the recipe. Turned out fantastic! Will definitely be making this again!

Outrageous Warm Chicken Nacho Dip

What a great twist on the standard processed cheese dip! Since there were no special instructions for cooking the chicken, I boiled it for 20 minutes in chicken stock and the remainder of the taco seasoning from the package.

Creamy Chipotle Chicken

This was yummy! My only complaint is that the cream cheese did not melt the way it was supposed to, so it looked gritty. I removed the chicken from the sauce and used a stick blender to blend the sauce for a creamier/prettier look. Will definitely make again.

Oven Roasted Parmesan Potatoes

We absolutely loved these. I used the small or baby Yukon gold potatoes instead of red, and doubled the amount of parmesan. Dribble a little home made ranch dressing over these and yum yum perfection.

Cola Pot Roast I

Mom's Favorite Baked Mac and Cheese

This is the best macaroni ever, although I did as suggested and left the onion out, using onion salt in place of regular salt. I also did not bake it the first time I made it, but the second time I did, as I made it early for a family dinner and reheated in the oven. I didn't have any problems with it drying out during baking, but I don't think I baked it as long as the recipe said.

Italian Cheese Bread

I made this with mozzarella instead of pepper jack and it tasted wonderful. However the top sunk in and it was so airy in the middle it was hard to slice. I wondered if I should have used the bread machine yeast instead of the active dry, or if I should have waited to add the cheese until after the first rising cycle was done. Will definitely try again because the taste was great, but I will research my bread machine and cheese breads before I do.

Penne with Spicy Vodka Tomato Cream Sauce

This was fabulous!! I did add 2 diced shallots and 1/2 red bell pepper to the sausage while it was browning. Other than that, I followed the recipe exactly and it was a hit with both my husband and 17 year old son. Definitely a repeat! Can't wait to try the leftovers.

Best Bourbon Chicken

This was fantastic! After reading the reviews from people who thought it was too dry, I cut the simmer time down from 20 minutes to 10 minutes and thought it turned out great. Served it over rice and can't wait to eat the leftovers!

Cranberry Sauce Chicken II

This was ok. I followed the ingredients exactly but cooked it on the stove instead of the oven. I felt that the onion soup mix took away from the flavors of the dressing and cranberry. I will try it again and substitute 1/4 of cup of chopped/minced fresh onion for the soup mix and see if I like it better.
