Paprika Chicken with Mushrooms

Butterflied two breasts and pounded them, mixed the seasonings with flour and dipped them and pan fried as recipe states. I cut the onions in half instead of leaving as rings because I thought they'd cook a little better. Husband gave it thumbs up. Quick and easy enough for a mid-week supper.

Parmesan Sage Pork Chops

Only had two pork chops so I cut the breading ingredients in half. Seared them in a cast iron skillet and baked them at 400 for 15 minutes or so in the same skillet. Really tasty, liked the hint of lemon and the chops were tender. Will definitely use this recipe again.

Truly Delicious Brussels Sprouts

Made as directed but added about one teaspoon of zest. Can't believe something so simple and easy is this great. Excellent side dish!

Shoyu Chicken

Cut recipe in half since I only had 6 thighs, marinated overnight and grilled to perfection. Very nice taste, very easy to prepare using ingredients already on hand, will make again.

Yellow Squash Casserole

We love this casserole and have it often. Of course I changed it a little in that I use 2 yellow squash, one zucchini and two small carrots and then follow the rest of the recipe as written. The additions make a colorful casserole and doesn't really affect the taste. It's a great way to use plentiful squash and with the additions it's easy to get extra veggies in your diet.

Grandma's Chicken Chardon

I used a mix of mushrooms that I picked up already packaged in the store and my husband loved the mushrooms. We liked the chicken also, had a nice taste that was different from regular ol' baked chicken. Will make this again but double the mushrooms for DH.

Yellow Squash Patties

I cut the recipe in half the first time and it still made so much more than the 3 of us could eat. The patties are delicious so I used the recipe as a guideline to make a smaller amount. I grate one yellow squash and 1/2 a small onion and add 1/2 cup of cornmeal, 3/4 cup of flour, 3/4 C shredded cheddar, one egg and salt and pepper. I also grate one carrot into the mix and I also added grated zucchini one time. Great way to get extra veggies into your diet.

Garden Penne

This wasn't very tasty right out of the oven but because I had so much left, I refrigerated it overnight. Reheated the next day it earned a 5 star rating. Suggest making the day before you want to serve it. I am making more now to have for tomorrow.

Vegetable Medley I

I made this for supper and it was just okay but since I had lots left over, I reheated it for lunch the next day and it was GREAT! I added fresh corn cut from the cob because I had extra. It's 5 stars if made a day ahead to allow the flavors to meld. I'm making more now to toss in the freezer.

Honey Roasted Red Potatoes

5 stars because my husband (who normally doesn't comment) said he really liked the potatoes. I had a mix of new red and new yellow potatoes (golf ball size) and cut them into large cubes to expose more edges to the sauce. That size also baked faster and had more crispy edges.

Slow Cooker Pork Chops II

Followed recipe except used pork roast cut into pieces. It does smell great while cooking but we found it to be very bland. Not sure what would help.
