South African Malvapoeding (Marshmallow Pudding)

Cake flour: has a less expansive gluten for crumblier texture. Acceptable substitution is to remove 2 T all purpose flour per cup as required for the recipe. I think that commercially available cake flour contains some cornstarch, but I'm not certain.

Fig and Olive Tapenade

I made this recipe for a large group at a function that did not serve cocktails and the response was mixed. However, when served with wine, the group loved it. Goat cheese would be a more sophisticated base, but is yet another very specific taste. Delicious and upscale, but save for your more adventurous guests.

Broccoli and Tortellini Salad

At a large family gathering we were raiding the sweets for an evening snack and my cousin opted for another portion of this salad instead! Lazy cook that I am, I use barely thawed frozen broccoli florets. This went directly into my all time favorites file.

Cucumber and Olive Appetizers

Spicy Bean Salsa

Really enjoyed this salsa, and would consider serving it as a side dish salad. I substituted a pkg. of dry italian dressing and a dash of olive oil and balsamic vinegar for the dressing and it worked well.

Watermelon Fire and Ice Salsa

Very, very good! Just like the salsa used with grilled foods in expensive restaurants! I added a chopped mango the second time. I drain the salsa in a colander just before serving. It will continue to weep--just keep draining. YUM!

Mincemeat Cake

Yummy! Good holiday cake. I made it as is, and also as a bundt cake with a jigger of brandy added and glazed it with melted hard sauce.
