Fresh Southern Peach Cobbler

Using the fruit I had on hand which was plums, apricots, and an apple instead of the peaches I ended up with a wonderful dish. I did everything else per the recipe and will definately make this again.

Nana's Squash Casserole

Even my 6 yo who says he doesn't like squash loves this dish. I made it tonight and didn't tell him it had squash in it; I was amazed when he ate 6 servings. Thanks so much for this recipe!

Scalloped Potatoes and Onions

This is true comfort food. The only thing I did different was to saute the onion in the butter before adding the flour and I precooked the potatoes in the microwave for 6 min before slicing them. I wanted to have this for a weeknight supper but I didn't want to wait 2 hours for it to bake; so by doing this I was able to reduce the baking time to 1 hour. It was a homerun with the whole family and I will make it often.

Curried Pea Soup

I made this on the spur of the moment for lunch. My husband wasn't excited about it when he saw it and my 5yo son saked "Why is this soup green?". I made grilled cheese sandwiches to go with it and we proceeded to eat the whole pot of soup. This has never happened before! Thanks so much for helping me to get something healthy into my family!

Peanut Butter Balls IV

I made these with my 4 yo son. He said they were soooo good they didn't need any chocolate. I didn't have any maple flavoring so I doubled the vanilla and we ate them without the chocolate coating. Super easy and super good. This is a keeper.

Thousand Island Dressing II

I only made half of the recipe since I am the only one who likes thousand island. I thought it was a little too sweet and needed a little something else. So I added a tsp apple cider vinegar and 1/4 tsp onion powder. Now I think it is just perfect.

Italian Confetti Pasta Salad

I served this wonderful salad over lettuce for a lite summer dinner. I used some dried basil since I didn't have fresh and omitted the black olives since my family doesn't care for them. My husband loved it and my 4 yo had seconds which is rare. This will be a regular on our table this summer. Thanks for the great recipe.

Cheese and Broccoli Chicken Soup

I didn't measure anything as I wanted a smaller pot of soup for my lunch and my 3 year old. It was thick and creamy and cheesy. My son really liked it, but broccoli is one of his favorite veggies :-)

Apple Pie by Grandma Ople

This is the best apple pie ever. I used a store bought crust and didn't use the top crust. But my husband, who normally doesn't like sweets, was rolling his eyes with pleasure. This is a keeper. Thanks for Grandma Ople's recipe!

Broccoli and Tortellini Salad

This is now my standby for any potluck or party. I always take copies of the recipe with me because I am always asked for it. I use dry pasta instead of fresh because it holds up better. My mom make this ALL the time now. Thanks so much for the recipe!
