Awesome Sausage, Apple and Cranberry Stuffing

This was my second year in a row for this stuffing and forget the turkey, I can't stop picking at the leftovers of this stuffing!!! My changes this year were to add some fresh garlic and portobello mushrooms (in lieu of liver) to the sausage/veg mixture, added some pepper to the spices, and used less butter but added some white wine. I also didn't stuff this in the bird but cooked it in a casserole for 30 minutes and gave it several baster squirts of turkey juice for flavor and moisture throughout the cooking. Also, though I like the texture of the toasted breads I also tore up and added a few pieces of non-toasted bread so that I could have a mixture of soft and toasted breads in the stuffing. One last thing--I recommend a tart crisp apple like Empire or Granny Smith.

Anaheim Fish Tacos

Very delicious yes, but more like delicious messy soup oozing out of the tortilla. But I did love the flavor--good idea about making juice into a creamy sauce or just serve as soup with tortillas on the side.

Fast and Friendly Meatballs

I have been working long hours and commuting 2 hrs/day this fall and these meatballs have become my best friend! Quick, easy, and I double them for leftover spaghetti and meatballs all week. I add a tbsp or so of balsamic vinegar (trick I got from a turkey meatloaf recipe) to keep the turkey moist. I also have mixed in some minced garlic for flavor. I add some different veggies to the marinara sauce each night and I have a new meal!

Ojai Roast Turkey with Rosemary, Lemon, and Garlic

This was the first turkey I ever made on my own and it got rave reviews. I had to use dried rosemary on the rub because by Thanksgiving eve I could only find one small package of fresh in my whole town! My 15lbs turkey took 3+ hrs. to cook (eventhough this recipe suggests 2-3) so I started getting pretty nervous about it drying out but it remained moist and flavorful throughout the entire bird probably thanks to the lemon. After almost 4 hours there were still a lot of pink spots but I had a free range turkey which I've heard can be colored that way even when done. Regardless, it was great and has created some of the best leftovers ever!

Southwestern Turkey Soup

I was so excited to make this and didn't love it as much as I thought. Don't get me wrong it was still very good. I didn't get a chance to get avocado so maybe that's where I went wrong. I will probably try again.

Turkey Frame Vegetable Soup

I love the way my turkey soup came out but I changed this recipe a bit. I followed the first part pretty closely except for adding about 1 cup of white wine. During the second part I added a little more white wine and pepper for flavor, 3-4 stalks chopped celery and 1 chopped onion. I skipped all of the beans and turnips. I never thought I liked parsnips but it turns out I love them in soup!

Blue Cranberry Sauce

This was easy and yummy, just as I had hoped from reading the other reviews. My boyfriend loves berries and tart things so I used lots of blueberries (frozen) and raspberries. Right after I made it we thought it was a little sweet and sugery but after a day or so it became perfectly tart!

Greek Pasta Salad with Roasted Vegetables and Feta

I've made this salad twice so far and everybody loves it! I put in extra tomatoes and I love it warm or cold. I mixed in some leftover salmon I had the day after a dinner party and it was excellant!

Easy Tomato Crab Soup

This is a fantastic soup and incredibly easy to make! I've even tried it with fat-free half & half and it still tastes great. I can't stop making this soup! I've experimented with sauteed portabellos, spinach, and a little red wine. I've even tried it with 1/2 of the half & half because my boyfriend is picky about creamy soups. I wish I could give it 6 stars.
