Mango Gazpacho

Very good and easy to make this. I did serve this out of canning jars as something a little different, but I also canned some. You can also spoon out the chunks for a fruity salsa for on top of dishes. I did not have a blender so this turned out a little on the chunky side. Will puree it more when I can afford a new blender. Otherwise the taste was great!

Curried Citrus Quinoa with Raisins and Toasted Almonds

This was good. I did use reduced sodium chicken broth instead of vegetable. Really didn't get the citrus flavor that much at all, mostly curry. I really like curry, but that is really the only flavor you taste. Would probably make it again using some orange zest in there as well and perhaps chopped carrots or celery or some kind of crunch.

Cranberry and Cilantro Quinoa Salad

First time at trying Quinoa and this was a simple recipe without adding salt! The flavors really worked well although the red onion was a little bit strong for me so I may use something else next time, but very good recipe thanks!

Super Simple Oven Barbequed Chicken

I really was not sure if I would like this. It was wonderful. I used all the correct ingredients and amounts, just did it slightly different by putting them all in the bowl to make a "paste", added chicken and let it hang out for 2 hours then grilled it. Turned out great! On the gas grill it tasted like it was done in a smoker or charcoal grill. Will definitely do again, possibly on skewers next time!

Big Smokey Burgers

Very good! This is very similar to what I normally would make but this had the liquid smoke and chilis I did use 1/4 tsp of chipotle powder for 1 lb of meat. Mixed everything together and let it sit in the fridge for about a half hour to hour before forming patties. Thanks for not putting an egg into the recipe, it doesn't need it.

Best Brownies

Not overly sweet at all. I normally use a mixer but did not want cake like brownies, so did it by hand. I am thinking if people got cake like brownies, this may be why. Do not overbeat or over cook. I didn't even use the toothpick because I would have left them in longer. I didn't get a dense over sweet brownie, but a lighter brownie, fudgelike and a lighter density. I did add 1/4 cup of pecans to it and used oil instead of butter in the batter. I also did not try this icing yet. I had some leftover icing I wanted to use. Only problem I had was that when I went to get one out it kinda fell apart so it cannot be eaten with your hand. I will try again to see if there was something I did wrong, but they are delicious and simple.

Buffalo Chicken Fingers

I really was not impressed with this one. I read reviews, took suggestions and applied them such as doubling up on the flour mix (you really need to) I used a whole egg, not just whites, that worked fine, used hot sauce instead of water, and the bread crumbs I made myself. Chicken turned out moist and good but this did not turn out crispy at all. There was only a slight hint of flavor it it, and I actually added more of the seasoning by accident to the bread crumbs. I could possibly try another suggestion to let the chicken hang out in some hot sauce prior, and maybe use panko or cornflakes for a more crispy crunch to it. I will try it again, but not this recipe. Just too much to change to get it to a 5 star in my book.

Marie's Homemade Mac and Cheese

Very good! I did make adjustments though. I made for serving of 4 (for a side dish, its more like 6). Used 1/2 lb macaroni, one can of soup, 1 cup milk, 1 egg, 1/2 cup cheese stirred into the mix and 1/2 cup for on top (I thought was plenty), 1/4 tsp cajun spice (will use more next time and maybe change to cayenne or just add 1/4 tsp of that in addition) and 1 tbsp dry mustard. This was so easy and creamy with the soup instead of a block with just shredded cheese. Cutting down the cheese to one cup total helps with sodium and calories, and I used 1% milk and no additional salt (made my own cajun spice mix without salt) Will make again with changes!

Chewy Granola Bars

These are quite good. Very easy to make. Difference in what I made was I used butterscotch chips, about half what it called for and instead of all the nuts I used my granola blend of granola bar "leftovers" I have. I did use the raisins, but half raisins have dried cranberries. They turned out great as far as sticking together and the texture which has been a great issue for me to find a nice chewy granola bar easy to make, that stays together and has all the ingredients. Will make again. Search is still on, but great.

Homemade Pancake Mix

I am so extremely upset by this recipe!! I started this thing looking at the ingredients to see if I had enough milk and eggs, since it is just me, I figured I would cut this in half. I put all the dry ingredients into the bowl (1/2 recipe) then read additional ingredients for pancakes, 1 egg and 3/4 cup milk. Okay, I added that plus some vanilla. DIDN'T EVEN MAKE A DENT IN IT as far as liquid. I thought, this cannot be right. WELL, the top ingredients are for a dry mix that goes in a storage container that you just scoup out what you need and THEN add an egg and milk to!!! IT DIDN'T STATE THIS UP TOP!! If it would have stated additional ingredients for pancakes using 1 cup of the mix, I would have understood it at 5am!! Instead I got stuck with rummaging for things to use for liquid to try to salvage this mess of 5 batches for 1 person!!! I could not afford to waste 3 cups of flour and 2 eggs and the rest of my milk on this so I did add some water (yeah, wonderful) and applesauce to try to get it out of a paste form. Needless to say, they are horrible and I get to eat them!!! Even if I would have made these correctly, where is salt in this? Where is any flavor at all??

Dry Ranch Style Seasoning for Dip or Dressing

Chicken Chimichangas with Sour Cream Sauce

This was awesome! I did wander off the recipe a little as far as technique. Did 1/2 recipe, I threw a large frozen chicken breast into a crock with spices (I did add more cayenne 1 3/4 tsp and chili powder 1/4 tsp and a little more garlic 1/4tsp and 2 cloves garlic) and let it cook for 8 hrs on low, with water recommended. (I probably will cut this down next time). I did not have green chilies so I couldn't use them, but really didn't miss them. Then I added in the onions and garlic and let it simmer for a bit longer. It fell right apart it was so moist. For the sauce, I had a little help from the microwave. I put into one dish the butter and flour, in a separate container the broth. Heated butter mix just enough so the butter melted, stirred it around and let the broth get really hot and slowly added it to the flour butter mix. Then added the sour cream, some poultry seasoning, pepper, little kosher salt and done. I also HATE frying. I did use less cheese, but wrapped them up (I only had small tortillas), brushed them with oil and threw them into the oven for 15 minutes and then flipped them over and let them go another 10. They got really crispy and wonderful without frying. Will do this again in the crock! With the smaller tortillas, this would be a great snack for a party like an egg roll. Cut it on diagonal and serve with the sauce for dipping.

White Chocolate Cranberry Granola Bars

I was so looking forward to these. I have made many batches of different granola bars looking for a variety that I can choose from that I like. One condition, they stay together! Mine completely fell apart. These wee not chewy, half of everything fell back into the pan. I followed the directions pushed them into the pan well and pulled them out right at 18 minutes to make sure that they would not overcook. The little bit that actually did hold together was okay, but not worth the hassle, time or money of trying to make these again. Luckily, I will take the ingredients that fell apart... pretty much all of it) and use them in another recipe I have that sticks well together. I really wish this would have held together, the spices seemed good, but would have probably put more in them.

Cajun Chicken

Very good!! Rubbed chicken with the spices (did double spices) and let them sit in the fridge for a few hours. Chicken turned out very moist. I used mine cold the next day on a salad and it was wonderful. Next time I will take one persons suggestion to add some bell peppers and onions into the mix.

Playgroup Granola Bars

These were great! So many options to tinker with, but the base was good to hold these together. I did use instead of honey, 1/2 c light corn syrup, about half way then the rest honey, but I may just make this 50/50 for honey and maple syrup. I did use wheat flour, 1/2 cup raisins, 1/2 cup dried cranberry. I used 1/2c brown sugar, 1 1/2c quick oats and 1/2 c puffed rice cereal since I have 3 boxes of it. They turned out great! Nuts would be a great addition too.

Dad's Cheesy Bacon Wrapped Meat Loaf

With slight changes, this was excellent!!! I used 1/4c bread crumbs (with a little italian seasoning) BBQ sauce instead of ketchup, made a 1 lb loaf with green onions, green bell pepper, dry mustard and used 3 pieces of real bacon, cut in half and just put on top. then about a tablespoon of bbq sauce on top of the bacon, into oven for an hour. I also mixed all the dry ingredients in a bowl, added the egg, while keeping the hamburger in the fridge. At the last minute, I added the hamburger, quickly blended and put a half a cup of shredded cheese into the middle. This kept its shape nicely because I kept it in the fridge. I would not add the cheese on top again because it seemed to just melt off. I did add about 1/8 tsp more on seasonings except the garlic powder, just added 2 cloves of zested garlic. I may add just a little more bbq sauce to the actual meatloaf mix next time, but a keeper!!! Great base recipe!

Strawberry Orange Coconut Smoothie

Did not really care for this at all. Taste was okay, but felt that it was too runny. I used a tiny orange and thought this was too much. With some additions to thicken it up, it could be better, but I like my smoothies thicker. As the recipe is, I would not make again.

Dutch Apple Pie

Made this last night. Very easy to make. I used about 2 1/2 apples, next time I will use more. Needs I think a little more butter in the crumble for on top, so I may dab some on top. Crust turned out GREAT! Also needs a little bit of spice, like apple pie spice in it. Otherwise turned out great. Texture was wonderful, directions easy, and there wasn't anything overpowering.
